Ingredients
For the Tart Base and Toppings
- 350 g puff pastry block
- 1 egg
- 150 g fresh figs
- 80 g feta Greek cheese
- 1 teaspoon dried thyme
- Honey (optional, for drizzling)
For the Caramelised Onions
- 3 big white onions
- 1 tablespoon vegetable oil
- 2 teaspoons brown sugar
- 1 tablespoon balsamic vinegar
- Salt to taste
Instructions
- Prepare the Caramelised Onions: Heat vegetable oil in a pan over medium-low heat. Slice the onions and add them to the pan. Cook slowly, stirring occasionally to avoid sticking or burning.
- Add Brown Sugar: When onions start to soften, sprinkle the brown sugar to accelerate caramelisation. Continue stirring every 5-7 minutes, ensuring onions brown evenly without burning, for about 40 minutes.
- Deglaze the Pan: Once onions are fully caramelised, pour in balsamic vinegar to deglaze the pan. Stir well and season with salt to taste. Remove from heat and set aside.
- Preheat Oven: Set your oven to 200°C (392°F) to warm up while you prepare the pastry.
- Roll Out Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry, rotating the dough to maintain even thickness. Transfer it onto a baking tray.
- Score Pastry Border and Egg Wash: Using a knife, carve a thumb-sized border around the puff pastry edges. Whisk the egg and brush over the border to create a golden crust when baked.
- Assemble Tart: Spread the caramelised onions evenly within the border area on the pastry. Quarter the washed figs and distribute them evenly on top. Crumble feta cheese over the tart, then sprinkle dried thyme.
- Bake the Tart: Place the tart in the preheated oven and bake for 20-25 minutes or until the crust is golden brown and crisp.
- Finish and Serve: Optionally drizzle a little honey over the tart for added sweetness and a contrasting texture before slicing and serving.
Notes
- Use well-thawed puff pastry for easier rolling and better texture.
- Cook onions slowly to fully develop their sweetness; rushing this step affects flavor.
- Adjust the amount of thyme to your taste for a more or less herbal note.
- Honey is optional but adds a lovely finishing touch that complements the figs nicely.
- The tart is best served warm but can also be enjoyed at room temperature.
