  • Total Time: 1 hour 20 minutes
  • Yield: 4 servings

Ingredients

For Caramelized Onions and Peppers

  • 2 tablespoons unsalted butter, divided
  • 1 large sweet onion, thinly sliced
  • 2 medium cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 large sweet pepper, cored and thinly sliced
  • Salt and pepper to taste

For Burger Patties

  • 1 lb ground chuck
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder

To Assemble

  • 4 slices pepper jack cheese
  • 4 burger buns, toasted
  • 4 large lettuce leaves
  • 4-8 slices tomato

Instructions

  1. Caramelize the Onions: Melt 1 tablespoon of butter in a large skillet over medium-low heat. Add the thinly sliced onions and stir occasionally, allowing them to slowly caramelize until they reach a deep golden-brown color, which will take about 35-40 minutes. This slow cooking develops their sweetness and rich flavor.
  2. Add Garlic and Deglaze: Stir in the minced garlic and cook for 1 minute until fragrant. Pour the balsamic vinegar into the pan to deglaze, scraping up all the flavorful browned bits from the bottom of the skillet. Remove the caramelized onion mixture and place it into a bowl, setting it aside for now.
  3. Sauté the Sweet Peppers: In the same skillet, melt the remaining 1 tablespoon of butter over medium-high heat. Add the sliced sweet peppers and sauté for 4-6 minutes until they become tender. Then toss the peppers into the caramelized onion mixture and lightly season with salt and pepper to taste.
  4. Prepare Onion and Pepper Mixture for Burgers: Divide the caramelized onion and pepper mixture in half. Place one half on a cutting board and finely dice it; this diced mixture will be combined into the burger patties. Keep the other half intact on a small sheet of foil to use as a topping later.
  5. Mix and Form Burger Patties: Place the diced onion and pepper mixture into a large bowl. Add the ground chuck, kosher salt, black pepper, paprika, and onion powder. Gently knead the mixture until just combined—do not overwork the meat to keep it tender. Divide into 4 equal portions and form each into a burger patty.
  6. Grill the Burgers: Preheat an outdoor grill to 400°F. If cooking indoors, preheat a large cast iron grill pan over medium-high heat and grease it lightly. Cook the burger patties on the grill or grill pan, flipping once, until they reach your desired degree of doneness (approximately 4-5 minutes per side for medium). During the last 1-2 minutes of cooking, place a slice of pepper jack cheese on each patty to melt.
  7. Heat Reserved Onion and Pepper Mixture: Place the reserved caramelized onion and pepper mixture wrapped in foil on the grill. Cook for 2-3 minutes, tossing frequently to heat through evenly.
  8. Assemble the Burgers: Lay a large leaf of lettuce on the bottom half of each toasted burger bun. Place a cooked burger patty on top, followed by 1-2 slices of tomato and a generous portion of the warmed caramelized onion and pepper topping. Cap with the top half of the bun and serve the burgers immediately for the best flavor and texture.

Notes

  • Caramelizing onions is a low and slow process that develops deep sweetness; do not rush by using high heat to avoid burning.
  • If fresh sweet peppers are not available, red or orange bell peppers make a great substitute.
  • Ground chuck with about 80% lean meat is ideal for juicy, flavorful burgers.
  • Adjust seasoning in the burger mix to your taste preference before forming patties.
  • For an indoor option without a grill, a cast iron skillet or grill pan works perfectly.
  • Toast the buns to add a crunchy texture that complements the juicy burger and toppings.
