Ingredients

  • 1 cup raw cashews
  • 5 Medjool dates, pitted and halved
  • 3 cardamoms, skinned and seeds crushed or ¼ teaspoon cardamom powder

Instructions

  1. Prepare the cardamom and dates: Crush the cardamom seeds with a mortar and pestle to release their fragrance and pit and halve the Medjool dates. Set both aside for later use.
  2. Pulse the cashews: Place the raw cashews in a food processor and blitz until they reach a grainy, sandy texture, which helps form the base of the energy balls.
  3. Combine all ingredients: Add the crushed cardamom, rose water, and the pitted dates to the processed cashews. Continue processing until the mixture is fully incorporated and sticky enough to hold shape.
  4. Shape the energy balls: Using your palms, take a handful of the mixture at a time and roll it into ping-pong-sized balls. Place them on a plate as you go until all the mixture is used up.
