Caribbean Spiced Sorrel Tea is a flavorful and refreshing hibiscus beverage infused with warming spices, citrus zest, and sugar. This traditional tea is steeped for up to two days to develop deep taste, then served chilled or hot, garnished with lime and mint for a perfect tropical drink.

Ingredients

Tea Base

  • 2 cups dried sorrel (hibiscus) flowers
  • 1/3 cup fresh chopped ginger, pieces pounded open with a mallet
  • 6 whole cloves
  • 2 cinnamon sticks
  • 1 teaspoon allspice berries
  • 2 cardamom pods, lightly crushed (optional)

Sweetener & Citrus

  • 1 1/2 cups demerara sugar, plus more to taste
  • Grated zest or peels from 1 medium orange
  • Grated zest or peels from 1 small lime
  • Grated zest or peels and juice from 1 medium lemon

Other Ingredients

  • 2 quarts water
  • Sliced lime, mint leaves for garnish

Instructions

  1. Combine: In a large stockpot, add the dried sorrel flowers, chopped ginger, whole cloves, cinnamon sticks, allspice berries, and cardamom pods (if using). Pour in the demerara sugar. Add 2 quarts of water and stir well to fully combine all ingredients.
  2. Boil: Place the pot over medium heat and bring the mixture to a boil. Once boiling, immediately remove from heat to prevent overcooking and bitterness.
  3. Add Citrus: Add the grated zest or peels from the orange, lime, and lemon, as well as the lemon juice to the hot mixture. Stir the tea well to incorporate all the fresh citrus flavors.
  4. Steep: Cover the stockpot tightly with a lid and let the tea steep at room temperature for 1 to 2 days to develop maximum flavor. For quicker preparation, steep for at least 2 hours.
  5. Strain: Carefully strain the tea through a fine-meshed sieve into a clean container. Discard the solids. Taste the tea and adjust the sweetness by adding more sugar if desired.
  6. Bottle: Pour the strained sorrel tea into glass bottles, mason jars, or airtight containers, leaving about an inch of headspace. Seal the containers tightly to maintain freshness.
  7. Chill: Transfer the bottled tea to the refrigerator to chill thoroughly before serving.
  8. Serve: Shake the bottle well before serving. Enjoy the sorrel tea chilled over ice, garnished with sliced lime and mint leaves if desired. This tea can also be served hot as an herbal infusion.
  9. Store: Keep the sorrel tea refrigerated in an airtight container where it will stay fresh for up to 1 week.

Notes

  • For stronger flavor, steep the tea for the full 1 to 2 days, but you can enjoy it after 2 hours if short on time.
  • Adjust the amount of sugar to your preferred sweetness, or substitute with honey or a sugar alternative if desired.
