This moist and flavorful Carrot Cake Roll combines the classic spices of cinnamon, nutmeg, and ginger with freshly shredded carrots for a delightful twist on traditional carrot cake. Baked in a jelly-roll pan and filled with a smooth cream cheese frosting, this cake roll is perfect for a festive dessert or special treat. The cake is tender and easy to roll without cracking, and the creamy filling complements the spiced carrot cake beautifully.

  • Total Time: 35 minutes
  • Yield: 8 servings

Ingredients

Carrot Cake Roll

  • 3/4 cup all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 3 eggs
  • 1/2 cup cane sugar (or granulated white sugar)
  • 2 tablespoons avocado oil (or vegetable oil)
  • 1 teaspoon vanilla extract
  • 2 cups shredded carrots (about 2-3 medium carrots)
  • 1/4 cup powdered sugar for rolling

Cream Cheese Filling

  • 1 cup powdered sugar (sifted)
  • 8 ounces cream cheese (room temperature)
  • 6 tablespoons butter (softened)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 375°F. Line a 15 x 10-inch jelly-roll pan with parchment paper, leaving about 1 inch extra hanging on the two longer sides to help lift the cake after baking. Optionally, sprinkle some water on the pan before pressing parchment or lightly mist the parchment with cooking spray to ensure easy cake release.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, cinnamon, baking powder, ground ginger, salt, nutmeg, and ground cloves until well combined.
  3. Mix Wet Ingredients and Combine: In a large mixing bowl, whisk eggs and sugar together for about 1 minute until thickened. Add avocado oil, vanilla extract, and shredded carrots, whisking until combined. Gently fold the dry flour mixture into the wet ingredients with a rubber spatula until just combined, avoiding overmixing.
  4. Bake the Cake: Spread the batter evenly in the prepared jelly-roll pan. Bake for 10 to 13 minutes, or until the top of the cake springs back when touched.
  5. Roll the Cake: Carefully lift the cake and parchment out of the pan onto a flat, heat-safe surface. While still warm, slowly roll the cake from a short end to the other short end, rolling it completely. Place the rolled cake seam-side down on a wire rack and let it cool to room temperature.
  6. Prepare the Cream Cheese Filling: While the cake cools, whisk together cream cheese, sifted powdered sugar, softened butter, and vanilla extract until smooth. Adjust consistency by adding more powdered sugar if too thin, or a little water if too thick, aiming for a spreadable medium consistency.
  7. Fill and Re-roll the Cake: Once cooled, gently unroll the cake back to a flat (or mostly flat) position. Spread the cream cheese filling evenly over the cake, leaving about a 3/4-inch border on all sides. Carefully re-roll the cake, peeling away parchment paper as you go, until completely rolled. Wrap tightly in plastic wrap and refrigerate for at least one hour.
  8. Serve: Remove the cake roll from the refrigerator and unwrap it. Lightly dust with powdered sugar on all sides if desired. Slice and serve.
  9. Storage: Store any leftovers wrapped tightly in plastic wrap in the refrigerator for up to 3 days.

Notes

  • Use fresh carrots shredded finely to ensure tenderness in the cake.
  • Rolling the cake while it is warm helps prevent cracking, but be careful to handle it gently.
  • You can substitute avocado oil with vegetable oil if preferred.
  • The cream cheese filling consistency is important for easy spreading and preventing it from oozing out when rolling.
  • Powdered sugar can be dusted over the finished cake roll for an elegant presentation.
  • Make sure to cool the cake completely after the initial roll before filling to avoid melting the filling.
