Ingredients
For the Cauliflower:
- 1 large head cauliflower, chopped
- 1 medium yellow onion, sliced
- 2-3 tablespoons avocado oil (or olive oil)
- 1½ teaspoons cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- ½ teaspoon sea salt, plus more to taste
- ½ teaspoon garlic powder
- Cayenne pepper, to taste
For the Cabbage Slaw:
- 3 cups sliced cabbage (from about ¼ large head or ½ small head)
- ¼ cup toasted pepitas
- 1 lime, juiced
- 1 tablespoon olive oil
- Salt, to taste
For the Guacamole:
- 2 medium ripe avocados, mashed
- 1 lime, juiced
- Salt, to taste
For Assembly:
- About 6-8 corn tortillas (or almond flour/cassava tortillas for grain-free)
- Lime wedges, for serving
- Fresh cilantro, for garnish
Instructions
- Preheat the oven: Heat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- Prepare the cauliflower and onion: In a large bowl, add the chopped cauliflower and sliced onion. Drizzle with avocado or olive oil and toss well to coat all the pieces evenly.
- Season the vegetables: Sprinkle in the cumin, smoked paprika, oregano, sea salt, garlic powder, and cayenne pepper. Use your hands to massage and coat the cauliflower and onions thoroughly with the spices for maximum flavor.
- Bake the vegetables: Spread the coated cauliflower and onion mixture evenly on the prepared baking sheet. Roast in the oven for 20 to 25 minutes, or until the cauliflower is golden brown and crispy on the edges.
- Make the cabbage slaw: While the cauliflower roasts, place the sliced cabbage in a large bowl. Add the lime juice, olive oil, and salt, then toss well to combine. Adjust seasoning with extra lime juice or salt as needed. Stir in the toasted pepitas for added crunch.
- Prepare the guacamole: In a separate bowl, mash the ripe avocados. Add lime juice and salt, then mix until creamy. Taste and adjust seasoning with more lime juice or salt if desired.
- Warm the tortillas: Char the corn tortillas over a gas burner flame or warm them in a skillet until they become soft, pliable, and slightly smoky for enhanced flavor.
- Assemble the tacos: Spread a generous layer of guacamole on each warm tortilla. Top with the roasted cauliflower and onion mixture, then add a helping of the fresh cabbage slaw on top.
- Serve: Garnish with fresh cilantro and serve immediately with lime wedges on the side for extra zing.
Notes
- Use almond flour or cassava tortillas for a grain-free option.
- Adjust cayenne pepper to control spice level according to your preference.
- To toast pepitas, heat them in a dry skillet over medium heat until fragrant and slightly browned, then cool before adding to slaw.
