  • Total Time: 40 minutes
  • Yield: Serves 8

Ingredients

Apples

  • 4 apples, washed and dried (720g)

Cheesecake Filling

  • 4 oz full-fat cream cheese, softened to room temperature (113g)
  • ½ tsp vanilla extract (2g) or ¼ tsp ground cinnamon
  • 1 Tbsp maple syrup (20g) or honey

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare it for baking the apples evenly.
  2. Prepare the apples: Wash and dry the apples thoroughly. Slice each apple in half horizontally through the center to create two rounded halves.
  3. Core the apples: Use a small cookie scoop or melon baller to scoop out the core and seeds from each apple half, creating a small cavity for the cheesecake filling.
  4. Make the filling: In a small bowl, combine the softened cream cheese, vanilla extract (or cinnamon), and maple syrup (or honey). Mix well until smooth and creamy.
  5. Stuff the apples: Using the cookie scoop again, fill each apple cavity with about 1 tablespoon of the cheesecake filling, ensuring an even distribution among all halves.
  6. Arrange and add water: Place the stuffed apple halves cream cheese side up in a 9”x9” glass baking dish. Pour 2 tablespoons of water into the bottom of the dish to help keep the apples moist during baking.
  7. Bake: Bake the apples in the preheated oven for 30 minutes until the apples are tender and the filling is set.
  8. Cool and serve: Allow the baked apples to cool slightly before serving for the best flavor and texture.

Notes

  • Store leftovers in an airtight container in the refrigerator for 3-4 days.
  • These baked apples can be enjoyed cold or reheated in the microwave or oven for a warm dessert.
  • You can substitute maple syrup with honey as a natural sweetener.
  • Vanilla extract can be replaced with ground cinnamon for a different flavor profile.
