Ingredients
Strawberries
- 1 lb. fresh strawberries (rinsed and pat dry)
Cheesecake Filling
- 8 oz. cream cheese (at room temperature)
- 2 tablespoons sour cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Topping
- 1/4 cup graham cracker crumbs
Instructions
- Prepare the Filling: Use an electric mixer to stir the cream cheese in a large bowl until smooth. Add the sour cream, powdered sugar, and vanilla extract to the bowl and continue mixing until the mixture is smooth and well-combined.
- Prepare the Strawberries: Use a strawberry huller or a paring knife to cut a circle around the top of each strawberry and gently scoop out the middle, creating a hollow cavity for the filling.
- Fill the Strawberries: Place the cheesecake filling into a piping bag or icing bag. Squeeze the filling into each hollowed strawberry until nicely filled.
- Add the Topping and Serve: Sprinkle graham cracker crumbs on top of the filled strawberries for added texture and flavor. Serve immediately or refrigerate until ready to enjoy.
Notes
- Ensure strawberries are completely dry before filling to prevent filling from becoming watery.
- For easier filling, chill cheesecake mixture for 30 minutes before piping.
- You can substitute graham cracker crumbs with crushed nuts or cookie crumbs for varied texture.
- This dessert is best served within a few hours of preparation for freshness.
