Ingredients
For the Pizza Rolls
- 1 recipe pizza dough (1 pound, 450g)
- ¼ cup pizza sauce (60ml), plus more for dipping
- 1½ cups shredded mozzarella cheese (6 ounces/170g)
- 3 ounces pepperoni slices (about 50 slices)
- 2 to 3 tablespoons yellow cornmeal
For the Garlic Butter
- 3 tablespoons salted butter, melted
- 1 clove garlic, finely minced
Optional Topping
- Freshly grated parmesan cheese
- Chopped fresh basil
Instructions
- Prepare the baking sheet: Brush a large baking sheet with olive oil or spray it with olive oil spray to prevent sticking during baking.
- Shape the dough: Generously flour a cutting board and place the pizza dough on it. Sprinkle a little flour on top of the dough as well. Stretch the dough into a rectangular shape about 14 inches wide by 10 inches tall, positioning it so the longer edge is closest to you.
- Add toppings: Spread the pizza sauce in a thin, even layer all over the dough, leaving a ½-inch border on the long side farthest from you. Evenly sprinkle shredded mozzarella cheese over the sauce, then arrange the pepperoni slices in a single, slightly overlapping layer on top.
- Roll the dough: Starting from the side closest to you, roll the dough tightly into a log, similar to rolling cinnamon rolls. Brush off any excess flour from the outside. Using a sharp knife with a back-and-forth motion, slice the log into 12 equal pieces about 1 inch wide, careful not to squash the rolls.
- Prepare for baking: Pour the yellow cornmeal onto a small plate. Dip one cut side of each roll into the cornmeal, then place that side down on the prepared baking sheet. Arrange the rolls about 1 inch apart.
- Let rise: Cover the rolls with greased plastic wrap and let them rest for about 20 minutes until they puff up slightly.
- Preheat oven: While the rolls are resting, preheat your oven to 425°F (220°C).
- Bake the rolls: Remove the plastic wrap and bake the rolls for approximately 15 minutes or until the tops and sides are golden brown and the cheese has melted completely.
- Make garlic butter: In a small bowl, whisk together the melted butter and finely minced garlic until well combined.
- Brush and serve: As soon as the pizza rolls come out of the oven, gently brush them generously with the garlic butter all over their tops and sides. Let them cool for a few minutes, then sprinkle with freshly grated parmesan cheese and chopped fresh basil if desired. Serve warm with extra pizza sauce for dipping.
Notes
- Use a sharp serrated knife and gentle slicing technique to avoid squashing the rolls.
- Letting the dough rest before baking allows the rolls to puff and become nicely airy inside.
