Ingredients
Potatoes
- 3 Large Potatoes, cubed into 1/2 inch pieces (about 2 pounds total; Russet, red, or Yukon gold)
Cheese and Dressing
- 1 Cup Ranch Dressing
- 1/4 Cup Sour Cream
- 1 Cup Shredded Cheddar Cheese (divided)
Seasonings
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/4 teaspoon Paprika
Bacon
- 6 Slices Bacon
Instructions
- Preheat the oven: Set your oven to 400°F (204°C) to get it ready for baking the potatoes later.
- Boil the potatoes: Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to medium-high and cook 8-10 minutes until just tender but not falling apart.
- Prepare ranch mixture: While potatoes boil, whisk together ranch dressing, sour cream, salt, pepper, garlic powder, onion powder, paprika, and half of the shredded cheddar cheese in a medium bowl until well combined.
- Drain and combine potatoes: Drain the cooked potatoes and transfer them to a large cast iron skillet or a 9x9 inch baking dish. Pour the ranch dressing mixture over the potatoes and gently stir to coat evenly.
- Bake the potato mixture: Place the skillet or dish in the preheated oven and bake for 15 minutes until the mixture is hot and bubbly.
- Cook the bacon: While the potatoes bake, cook the bacon slices in a large skillet over medium-high heat until crisp. Transfer to a paper towel-lined plate to drain excess fat, then crumble once cool enough to handle.
- Add topping and finish baking: Remove the potatoes from the oven, sprinkle the crumbled bacon and the remaining shredded cheddar cheese over the top. Return to the oven for an additional 3 minutes until the cheese melts and everything is heated through.
Notes
- You will want about 2 pounds of potatoes total for this recipe. Russet, red, or Yukon gold potatoes all work great.
- Use a cast iron skillet or a 9x9 inch baking dish to bake the potatoes evenly.
- For crispier bacon, cook it ahead and crumble just before adding to the potatoes.
- If you prefer, you can adjust seasoning amounts to taste, especially salt and spices.
