Ingredients

  • 1 medium zucchini, diced small

Instructions

  1. Prepare Seasoning: In a small bowl, combine paprika, kosher salt, and black pepper to create the seasoning blend.
  2. Season Chicken: Toss the cubed chicken with half of the seasoning mixture, reserving the rest for vegetables later.
  3. Cook Chicken: Heat 1 tablespoon of olive oil in a large deep skillet over medium heat. Add the seasoned chicken and cook for 7-8 minutes until almost cooked through, turning occasionally. Remove chicken from skillet and set aside.
  4. Sauté Vegetables: Add the remaining tablespoon of olive oil to the same skillet. Add diced onion, zucchini, shredded carrots, diced potatoes, and minced garlic. Sprinkle the reserved seasoning over the vegetables and stir well. Cook and sauté for 3-4 minutes.
  5. Steam Vegetables: Pour in ⅓ cup water and cover the skillet with a lid. Cook over medium heat, stirring occasionally, until potatoes and vegetables are tender, about 7-8 minutes.
  6. Combine Chicken and Vegetables: Return the cooked chicken to the skillet. Stir everything together and continue cooking for another 1-2 minutes to finish cooking chicken and let any excess liquid evaporate.
