A hearty and flavorful Chicken Cobb Salad featuring grilled seasoned chicken breasts, fresh romaine, cherry tomatoes, blue cheese, hard-boiled eggs, and crispy bacon, all tossed in a tangy homemade avocado oil dressing. Perfect for a satisfying and nutritious meal.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Chicken:

  • 2 large chicken breasts, butterflied if very thick
  • 2 tbsp oil
  • 2 tbsp garlic powder
  • 2 tsp onion powder
  • ½ tsp Italian seasoning

Dressing:

  • ½ cup avocado oil
  • ¼ cup red wine vinegar
  • 1 ½ tsp honey (or sugar-free maple syrup if low-carb/keto)
  • ¾ tsp garlic powder
  • ½ tsp Dijon mustard
  • ½ tsp onion powder
  • ¼ tsp salt
  • ⅛ tsp pepper

Salad:

  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup blue cheese, crumbled
  • 2 hard-boiled eggs, sliced
  • 4 slices bacon, cooked and chopped

Instructions

  1. Season the Chicken: In a large bowl, toss the chicken breasts with garlic powder, onion powder, and Italian seasoning until evenly coated. Set aside.
  2. Cook the Chicken: Heat 2 tablespoons of oil in a grill pan or skillet over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. Transfer the chicken to a plate and allow it to cool, then slice into strips.
  3. Prepare the Dressing: While the chicken is cooking, whisk together the avocado oil, red wine vinegar, honey (or sugar-free maple syrup), garlic powder, Dijon mustard, onion powder, salt, and pepper in a small bowl or mason jar. Set aside.
  4. Assemble the Salad: Divide the chopped romaine lettuce evenly among serving plates. Top each salad with sliced chicken, cherry tomatoes, blue cheese crumbles, sliced hard-boiled eggs, and chopped cooked bacon.
  5. Dress and Serve: Drizzle the prepared dressing over each salad. Optionally, garnish with chopped chives or parsley. Serve immediately and enjoy!

Notes

  • Butterflying thick chicken breasts ensures even cooking.
  • Use sugar-free maple syrup in the dressing for a low-carb or keto-friendly option.
  • Hard-boil the eggs ahead of time for convenience.
  • Adjust the amount of garlic powder and onion powder to taste.
  • Grilling the chicken adds a smoky flavor, but a skillet is a good alternative.
