Ingredients
Chicken Layer
- ½ cup salted butter, melted
- 4 lbs shredded chicken breast, pre-cooked or use 2 rotisserie chickens
- 12 ounces frozen peas and carrots
Creamy Sauce
- 1½ cups chicken broth
- 1 (10.5 oz) can cream of chicken soup
Biscuit Topping
- 2 cups whole milk
- 1 (11.36 oz) box Red Lobster Cheddar Biscuits mix, dry
- 1 cup shredded cheddar cheese (optional)
- 1 tablespoon Old Bay seasoning or seasoning of choice (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cobbler.
- Prepare Baking Pan: Pour the melted butter into the bottom of a 9×13-inch baking dish and place it on a large rimmed baking pan to catch any spills during baking.
- Layer Chicken: Evenly spread the shredded chicken breast over the melted butter in the baking pan, creating a flat layer.
- Add Vegetables: Spread the frozen peas and carrots evenly over the top of the chicken layer.
- Make Sauce: In a medium bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this mixture evenly over the chicken and vegetables in the pan, but do not stir.
- Prepare Biscuit Topping: In another bowl, whisk together the whole milk, Red Lobster Cheddar Biscuits dry mix, and seasoning from the biscuit mix box. Add the shredded cheddar cheese and Old Bay seasoning if using. Pour this biscuit mixture evenly over the creamy sauce layer, again without mixing.
- Bake: Place the baking dish in the preheated oven and bake uncovered for 50 to 60 minutes, until the biscuit topping is golden brown and cooked through.
Notes
- Use pre-cooked chicken or rotisserie chicken for convenience.
- Do not stir once the sauce and biscuit topping are poured; layers should remain distinct to create the cobbler effect.
- Optional cheese and Old Bay seasoning can be omitted or customized according to taste.
- Place the baking dish on a rimmed baking pan to avoid oven spills or drips.
- Check biscuit topping doneness by inserting a toothpick; it should come out clean.
