Chicken
- 1 ¼ lb boneless chicken breast, cut into 1-inch pieces
Sauce & Aromatics
- 2 tbsp olive oil, divided
- 2 tbsp butter, divided
- 2 shallots, chopped
- 4 cloves garlic, minced
- 2 tbsp flour
- ½ cup white wine
- 1 cup chicken stock
- juice of one lemon
- 2 tbsp capers
- ¼ cup parsley, chopped

Instructions
- Season Chicken: Season the chicken pieces generously with salt and black pepper to enhance their flavor before cooking.
- Sauté Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and sauté until they are cooked through and no longer pink inside. Remove the chicken from the skillet and set aside.
- Sauté Shallots and Garlic: In the same skillet, add the remaining tablespoon of olive oil and 1 tablespoon of butter. Stir in the chopped shallots and sauté for about 3 minutes until they soften. Add the minced garlic and cook until fragrant, about 30 seconds to 1 minute.
- Make the Sauce Base: Sprinkle the flour over the shallot and garlic mixture and stir continuously, allowing it to cook for about 1 minute to eliminate the raw flour taste.
- Add Liquids: Gradually whisk in the white wine, followed by the chicken stock and lemon juice. This will create a flavorful and slightly tangy sauce.
- Incorporate Capers and Parsley: Stir in the capers and chopped parsley to add bursts of flavor and freshness to the sauce.
- Finish Sauce: Stir in the final tablespoon of butter to enrich the sauce and season it to taste with salt and black pepper.
- Combine Chicken and Pasta: Return the cooked chicken to the skillet, then add the cooked penne pasta. Toss everything together to coat the pasta evenly with the sauce and to warm the chicken through.
