Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the roulades.
  2. Prepare the Filling: In a bowl, combine chopped sun-dried tomatoes, crumbled feta, thawed and drained spinach, softened cream cheese, and half of the grated Parmesan cheese. Mix thoroughly until well blended.
  3. Stuff the Chicken: Lay each halved and pounded chicken breast flat and evenly spread 1/4 of the filling mixture over each piece, ensuring full coverage.
  4. Roll the Roulades: Carefully roll up each stuffed chicken breast tightly and place seam side down on a baking sheet lined with parchment paper.
  5. Season and Add Cheese: Season each roulade generously with salt, freshly ground pepper, and the chopped thyme leaves. Sprinkle the remaining Parmesan cheese evenly on top.
  6. Bake: Place the baking sheet in the preheated oven and bake for 20 to 25 minutes until the chicken is almost fully cooked through.
