This Chicken Sausage Sweet Potato Bake is an easy, nutritious one-dish dinner combining flavorful apple chicken sausage with sweet potatoes, crisp apples, and tangy red onions. Perfect for weeknights, it balances sweet and savory flavors while offering a healthy, satisfying meal baked to tender perfection.

  • Total Time: 1 hour 5 minutes
  • Yield: 4 servings

Ingredients

Proteins

  • 1 pound apple chicken sausage (about 5 links)

Produce

  • 2 medium apples, sliced thin
  • 2 medium sweet potatoes, sliced into chunks
  • 1 red onion, sliced thin

Oils & Seasonings

  • 2 tablespoons olive oil
  • 2 teaspoons rosemary
  • 1 teaspoon sage
  • 1/2 teaspoon thyme
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit and spray a large baking dish with cooking spray to prevent sticking.
  2. Prepare the Vegetables and Apples: Layer the sliced sweet potatoes, apples, and red onions evenly in the prepared baking dish. Drizzle with 1 1/2 tablespoons olive oil.
  3. Season the Mixture: Sprinkle the rosemary, sage, thyme, salt, and pepper over the layered ingredients. Toss gently to ensure all pieces are coated with oil and seasonings.
  4. Add the Sausage: Place the chicken sausage links on top of the vegetable and fruit mixture. Drizzle the remaining olive oil over the sausage and season with additional salt and pepper as desired.
  5. Bake and Toss Halfway: Bake in the oven for about 50-60 minutes. Halfway through cooking, flip the chicken sausage links and toss the vegetables and apple slices to cook evenly.
  6. Adjust Cooking if Needed: If the chicken sausage cooks before the vegetables and apples are tender, remove the sausage to avoid overcooking, and continue baking the sweet potato and apple mixture for another 10-15 minutes until fork-tender.
  7. Serve: Slice the chicken sausage, mix it with the baked sweet potato and apple mixture, and enjoy your flavorful, hearty bake!

Notes

  • If using pre-cooked chicken sausage, add it on top of the veggies and apples about halfway through baking (around 25 minutes) to prevent overcooking and tough casing.
  • You can substitute white or yellow potatoes or butternut squash for sweet potatoes.
  • Sliced peaches are a delicious substitute for apples if preferred.
  • Adjust seasoning to your taste; adding fresh herbs can enhance flavor further.
