Pasta
- 1 pound thin spaghetti or linguine, uncooked
Sauce and Filling
- 4 tablespoons melted butter, divided
- 1 pound button or brown mushrooms, sliced
- 3 garlic cloves, finely minced
- 1 pound chicken breasts, cooked and sliced (or shredded rotisserie chicken)
- 2 cans cream of mushroom soup
- 2 cups sour cream
- 1 cup low-sodium chicken broth
- 2 tablespoons capers, optional
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Cheeses
- 2 cups Mozzarella cheese, shredded
- 1/2 cup shredded cheddar cheese
- 1/4 cup Parmesan cheese, shredded
Garnish
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat Oven: Preheat your oven to 350ºF (176ºC) to prepare it for baking the casserole later.
- Cook Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine until al dente according to package instructions. Drain the pasta and set it aside.
- Sauté Mushrooms and Garlic: Heat 2 tablespoons of butter in a large pan over medium-high heat. Add the sliced mushrooms and sauté for about 4 minutes until they soften. Add the minced garlic and cook for another 1-2 minutes until fragrant, then remove from heat.
- Combine Ingredients: In a large mixing bowl, combine the remaining 2 tablespoons of melted butter, cooked mushrooms, cooked chicken, cream of mushroom soup, sour cream, chicken broth, capers (if using), cooked pasta, salt, and black pepper. Stir thoroughly until every ingredient is evenly coated with the sauce.
- Assemble in Baking Dish: Transfer the pasta mixture into a 9 x 13-inch baking casserole dish, spreading it evenly. Sprinkle the shredded Mozzarella, shredded cheddar, and Parmesan cheese evenly over the top.
- Bake: Place the casserole dish in the preheated oven and bake for 40 to 45 minutes, or until the cheese is melted, bubbly, and the casserole is heated through.
- Garnish and Serve: Remove the casserole from the oven and garnish with the freshly chopped parsley. Serve hot and enjoy your creamy chicken tetrazzini!

- You can substitute cooked, shredded rotisserie chicken for the chicken breasts to save time.
