Ingredients
Main Ingredients
- 1 cup canned chickpeas (drained, thoroughly rinsed, and patted dry)
- 3/4 cup natural creamy peanut butter (peanuts and salt only)
- 1/3 cup powdered sugar
- 1/4 tsp sea salt
- 2 Tbsp molasses
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
Chocolate Coating
- 1 cup semi-sweet chocolate chips (use Enjoy Life brand for vegan/dairy-free option)
- Turbinado sugar for garnish
Instructions
- Prepare the chickpea dough: Place the drained and dried chickpeas in a food processor and blend until finely ground, about 15 seconds. Add peanut butter, powdered sugar, molasses, cinnamon, ginger, and sea salt to the processor. Blend for about 1 minute, stopping occasionally to scrape down the sides as needed, until the mixture forms a smooth, cohesive ball of dough.
- Shape the buckeyes: Roll the dough into 12 to 14 balls, each about 1.5 tablespoons in size. Arrange the balls on a parchment-lined baking sheet. Refrigerate for 15 to 20 minutes until they become slightly firm.
- Melt the chocolate: Place the semi-sweet chocolate chips in a microwave-safe bowl. Heat in 30-second increments, stirring between each interval, for a total of 90 to 120 seconds until the chocolate is fully melted and smooth.
- Dip and garnish: Dip each chickpea ball into the melted chocolate, then place them back on the parchment-lined baking sheet. Optionally, sprinkle Turbinado sugar on top for extra texture and sweetness. If any melted chocolate remains, drizzle it over the buckeyes for a decorative finish.
- Chill to set: Refrigerate the dipped buckeyes for 15 minutes or until the chocolate coating hardens completely. Serve chilled or at room temperature.
Notes
- Ensure chickpeas are well rinsed and dried to prevent the dough from becoming too wet.
- Use natural peanut butter with only peanuts and salt to keep the flavor clean and simple.
- Enjoy Life chocolate chips are recommended for a vegan and dairy-free version.
- Store leftover buckeyes in an airtight container in the refrigerator for up to one week.
- For firmer buckeyes, chill dough balls longer before dipping in chocolate.
