Ingredients
Vegetable Mix
- 19 oz can chickpeas, drained, well-rinsed and mashed (2 cups)
- 1/2 red onion, finely diced (50 g, approx. 1/3 cup)
- 1 small zucchini, grated (100 g, approx. 1 cup lightly packed)
- 3 tbsp finely chopped fresh cilantro (15 g)
Wet Ingredients
- 3 tbsp red wine vinegar (45 mL)
- 1 tbsp sriracha sauce (15 mL)
- 2 tbsp peanut butter (30 g)
Spices & Seasonings
- 1 tsp cumin
- 1 tsp garlic powder
- 2 tsp black pepper
- 1/2 tsp salt
Binders & Others
- 1 cup quick oats (100 g)
- 2 tbsp extra virgin olive oil (30 ml) for cooking
Instructions
- Mash chickpeas: After draining and rinsing the chickpeas, place them in a bowl and mash well using a fork or pulse a few times with an immersion blender until mostly smooth but slightly chunky.
- Add ingredients: Add finely diced red onion, grated zucchini, chopped fresh cilantro, red wine vinegar, sriracha sauce, peanut butter, cumin, garlic powder, black pepper, salt, and quick oats to the mashed chickpeas. Use your hands to mix everything very well until the mixture is fully combined.
- Shape burgers: Use your hands to shape the mixture into 6 to 8 evenly sized patties, pressing firmly so they hold together well during cooking.
- Cook burgers: Choose your cooking method: Either cook on a BBQ at 400°F for approximately 10 minutes per side until browned and cooked through; or heat 1 to 2 teaspoons of oil in a nonstick pan over medium heat and cook the patties for about 5 minutes per side until browned and firm; or bake in a preheated oven at 400°F for 20 to 30 minutes, flipping halfway through the cooking time.
- Serve: Toast buns and serve the chickpea veggie burgers topped with your favorite burger toppings such as lettuce, onion, tomato, ketchup, and mustard for a flavorful and satisfying meal.
Notes
- Make sure to drain and rinse the chickpeas well to avoid excess moisture that can make the burgers soggy.
- The mixture can be adjusted with more oats if it feels too wet or more peanut butter to increase binding.
- If baking, place the patties on a lined baking sheet to prevent sticking.
- These burgers freeze well: shape and freeze uncooked patties, then cook from frozen adding a few extra minutes per side.
- Feel free to customize the spice level by adjusting the amount of sriracha sauce.
