Ingredients
Dry Ingredients
- 225g natural almonds
- 1 cup sugar
- ¼ tsp salt
- 200g dark chocolate, chopped into small chunks
Wet Ingredients
- 3 egg whites
- 1 Tbsp white vinegar
- 1 tsp vanilla essence
Instructions
- Preheat the oven: Preheat your oven to 120°C using the fan bake setting. Line three large baking trays with baking paper to prevent sticking during baking.
- Prepare the almonds: Place the natural almonds into a food processor and blitz until the almonds are finely ground with a few small chunks remaining to add texture to the cookies.
- Beat the egg whites: In a stand mixer, combine the egg whites, white vinegar, and salt. Beat them until stiff peaks form but the mixture is not dry, ensuring a stable meringue.
- Add sugar gradually: While the mixer is running, slowly add the sugar in increments. Continue to beat until the mixture reaches quite firm and stiff peaks, indicating the sugar is fully incorporated.
- Fold in flavorings and mix-ins: Remove the bowl from the mixer. Add the vanilla essence, then fold in the ground almonds and chopped dark chocolate gently, combining thoroughly but carefully to avoid deflating the meringue.
- Shape the cookies: Using a teaspoon and spatula, dollop heaped teaspoons of the meringue mixture onto the lined trays, spreading evenly but leaving enough space for slight expansion.
- Bake the cookies: Bake all three trays simultaneously in the preheated oven for 40 to 45 minutes. The cookies are done when the edges start to turn golden but the center remains chewy, creating the perfect texture.
Notes
- The baking time may vary depending on your oven; watch closely towards the end to avoid over-baking.
- Ensure egg whites are at room temperature before whipping to achieve maximum volume.
- You can substitute dark chocolate with semi-sweet or milk chocolate based on preference.
- The cookies are best enjoyed within a few days and stored in an airtight container to maintain crispness.
- Use fresh almonds for optimal flavor and texture.
