Ingredients
Base Ingredients
- 1 cup cottage cheese (can substitute Greek yogurt)
- 1/4 cup full-fat coconut milk
- 1-3 tbsp sweetener (maple syrup recommended)
- 1 tsp vanilla extract
Chocolate & Chia
- 1/4 cup cocoa powder
- 4 tbsp chia seeds
Instructions
- Blend the base ingredients: Add the cottage cheese, coconut milk, sweetener, and vanilla extract to a high-speed blender and blend until the mixture is smooth and creamy, ensuring there are no lumps.
- Combine with dry ingredients: Pour the blended liquid into a bowl containing the cocoa powder and chia seeds.
- Whisk thoroughly: Whisk the mixture well, making sure to break up any clumps of chia seeds so the mixture is evenly combined.
- Refrigerate to set: Cover the bowl and place it in the refrigerator to let the mousse set for at least 4 hours, preferably overnight, allowing the chia seeds to absorb liquid and thicken the mousse.
- Serve: Serve the mousse chilled as is, or topped with your favorite additions such as fresh berries or nuts.
Notes
- You can substitute cottage cheese with Greek yogurt for a different texture and flavor.
- Adjust sweetener quantity according to your preferred sweetness level.
- Letting the mousse set overnight improves texture and flavor.
- Use full-fat coconut milk to achieve a creamier consistency.
- Chia seeds provide additional fiber and help thicken the mousse naturally.
