This homemade Cookie Bark recipe combines soft, buttery cookie dough baked in a thin layer and topped with melted semi-sweet chocolate for a deliciously decadent treat. Perfect for sharing or gifting, this cookie bark offers a delightful contrast of chewy cookie texture and a smooth chocolate layer that sets beautifully when chilled.

  • Total Time: 1 hour 7 minutes
  • Yield: About 24 pieces

Ingredients

For the Cookie Dough

  • 1 and 1/3 cups (167g) all-purpose flour (spooned & leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (12 Tbsp; 170g) unsalted butter, melted and slightly cooled
  • 2/3 cup (133g) granulated sugar
  • 1/4 cup (50g) packed light or dark brown sugar
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 1/2 cup (90g) mini chocolate chips

For the Topping

  • 8 ounces (226g) semi-sweet chocolate, finely chopped (two 4-ounce baking bars)
  • Optional: flaky sea salt or sprinkles, for topping

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (191°C). Line a light-colored 12×17-inch baking sheet (half sheet pan) with parchment paper and set it aside to prevent sticking and ease removal.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking soda, and salt to evenly distribute the leavening and seasoning.
  3. Combine Wet Ingredients: In another bowl, whisk the melted and slightly cooled unsalted butter with granulated sugar, brown sugar, egg yolk, and pure vanilla extract until fully combined and smooth.
  4. Form Cookie Dough: Pour the wet mixture into the bowl of dry ingredients. Using a silicone spatula, mix everything together until the dough is fully combined. Fold in the mini chocolate chips evenly throughout the dough. Note that the dough will be soft and look a bit greasy.
  5. Press Dough into Pan: Transfer the dough into the prepared pan and press it out evenly to cover the entire surface. Use your hands at first, then an offset spatula to smooth and spread the dough into an even thin layer across the parchment paper.
  6. Bake the Cookie Base: Bake for 18 to 20 minutes, or until the top is a deep golden brown. Check after 15 minutes, especially if using a dark baking sheet, as the baking time may be shorter due to increased heat absorption.
  7. Add Chocolate Topping: Remove the pan from the oven and immediately sprinkle the finely chopped semi-sweet chocolate evenly over the cookie surface. Return the pan to the oven and bake an additional 1 to 2 minutes just to soften and melt the chocolate.
  8. Spread the Melted Chocolate: Place the pan on a cooling rack. Using an offset spatula or the back of a spoon, spread the melted chocolate into an even layer over the cookie base. Optionally, sprinkle flaky sea salt or decorative sprinkles on top for extra flavor and presentation.
  9. Cool and Chill: Allow the cookie bark to cool for 20 minutes at room temperature. Then transfer the pan to the refrigerator and chill for at least 30 minutes until the chocolate topping is fully set and firm.
  10. Serve and Store: Break or cut the cookie bark into bite-size pieces and enjoy. Store leftovers in an airtight container at room temperature with parchment paper between layers for up to 5 days, though it is best enjoyed fresh.

Notes

  • Using a light-colored baking sheet is recommended to avoid overbaking; darker pans absorb more heat and may shorten baking time.
  • The dough will be sticky and soft due to the high butter content—pressing it evenly into the pan is essential for uniform baking.
  • Chilling after baking helps the chocolate topping to set properly, creating a nice hard shell.
  • Optional flaky sea salt adds a wonderful contrast to the sweet chocolate and cookie flavors.
  • Store cookie bark at room temperature separated by parchment to prevent sticking and maintain freshness up to 5 days.
