These chocolate chip cookie cups are a delightful twist on classic cookies, baked in muffin tins to create perfect little cups that can be filled with your favorite treats like Nutella, caramel sauce, or ice cream. The dough is rich with brown butter for extra flavor, and the use of chocolate chips ensures melty, gooey pockets of chocolate in every bite.

  • Total Time: 30 minutes
  • Yield: 12 standard-sized cookie cups

Ingredients

Base Ingredients

  • 1 cup (2 sticks) salted butter, melted and optionally browned
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon real vanilla extract
  • 2 1/4 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips

Optional Fillings

  • Nutella
  • Salted caramel sauce
  • Peanut butter, almond butter, or other nut butters
  • Reese’s peanut butter cups
  • Fresh berries and whipped cream
  • Ice cream
  • No-bake egg-free cheesecake filling

Instructions

  1. Make Cookie Dough: Melt the butter in a large bowl, optionally browning it for more depth of flavor. Whisk in the granulated and brown sugars until combined. Add the egg and vanilla extract, whisking until smooth. In a separate bowl, whisk together the flour, baking soda, and salt, then stir this dry mixture along with the chocolate chips into the wet mixture until just combined. Use a mixer on medium speed if needed to fully bring the dough together.
  2. Press Dough into Pans: Spray a muffin or cupcake tin with cooking spray. Press the cookie dough evenly into each cup, filling them up to create cups rather than just mounded cookies. You may use mini muffin tins or mini tart pans as alternatives. Adjust dough quantity accordingly.
  3. Bake: Preheat the oven to 350°F (175°C). Bake the cookie cups for approximately 12-15 minutes (mini pans require less time), until they are slightly puffed and lightly golden brown on the edges. Once out of the oven, use the back of a wooden spoon or similar utensil to gently press down the center of each cookie cup, creating an indentation for fillings. Allow them to cool slightly in the pans.
  4. Fill the Cups: When the cookie cups are cool enough to handle but still warm, carefully pop them out of the pans. Fill each cup with your choice of fillings such as Nutella, caramel sauce, nut butters, fresh fruits, or ice cream for a decadent treat.

Notes

  • Use salted butter for best flavor, but unsalted butter works if preferred.
  • Ensure butter and eggs are at room temperature to facilitate mixing and baking.
  • Using chocolate chips rather than chopped chocolate bars helps maintain structure and creates melty chocolate pockets.
  • For a dairy-free version, substitute butter with your favorite dairy-free butter.
  • For vegan or egg-free options, replace the egg with 1/2 tablespoon cornstarch dissolved in 1 1/2 tablespoons cold water.
  • Store empty cookie cups in an airtight container at room temperature for 3-4 days. Fill just before serving for best freshness.
  • Reheat leftovers gently in the microwave for a gooey cookie experience.
  • Use an oven thermometer to ensure accurate baking temperature.
  • Measure flour correctly by spooning into measuring cup and leveling or preferably by using a kitchen scale.
