Ingredients
Cookie Dough
- 150g butter, softened
- 1/2 cup brown sugar
- 1/2 cup caster sugar
- 1 egg
- 1 tsp vanilla essence
- 1 1/2 cups plain flour
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 3 Tbsp milk
- 75g chocolate buttons, chopped
Topping
- 15 chocolate buttons
- Vanilla ice cream, to serve
Instructions
- Preheat and prepare skillet: Preheat the oven to 170°C fan bake. Generously grease a 26cm cast iron skillet with butter to prevent sticking and ensure even baking.
- Cream butter and sugar: In the bowl of a stand mixer, beat the softened butter with both brown sugar and caster sugar until the mixture is smooth and creamy.
- Add egg and vanilla: Add the egg and vanilla essence to the butter-sugar mixture, then continue mixing on high speed until the batter becomes pale and fluffy, indicating good aeration.
- Combine dry ingredients: Sift together plain flour, cinnamon, and baking soda to ensure even distribution and add them to the wet ingredients.
- Incorporate milk and mix dough: Add the milk and mix on low speed until just combined to avoid overmixing, which can make cookies tough.
- Fold in chocolate buttons: Reserve 15 whole chocolate buttons for topping, chop the remaining 75g and gently fold the chopped chocolate into the cookie dough evenly.
- Shape dough in skillet: Press the cookie dough firmly and evenly into the prepared skillet, smoothing out the surface toward the edges for uniform thickness.
- Add topping and bake: Place the reserved chocolate buttons on top of the dough. Bake in the preheated oven for 25 minutes until the cookie is just cooked through in the center but still soft.
- Cool and serve: Allow the skillet cookie to cool for 10 minutes. Serve warm topped with scoops of vanilla ice cream for a delicious contrast of temperatures and textures.
Notes
- Use a butter-softened consistency, not melted, for best creaming results.
- A cast iron skillet is essential for even heat distribution and to achieve the characteristic crust.
- The cookie will be soft in the middle when done; it firms up slightly as it cools.
- Adjust the cinnamon amount to taste or omit entirely for a milder flavor.
- Vanilla ice cream is recommended but any creamy ice cream flavor pairs well.
