- 3 dried apricots
- 2 dried figs
- 1/4 cup raw almonds
- 1 Tbsp raw sunflower seeds
- 1 Tbsp raw pumpkin seeds
Coating
- 1/2 cup dark chocolate (for melting and coating)
Instructions
- Prepare the Fruit and Nut Mix: Chop the almonds, apricots, and figs into chunks or, if you prefer a chewier texture, blend them slightly to combine.
- Line the Tray: Line a small baking tray with parchment paper or use a silicone mold if you want individual bars.
- Mix Ingredients: Add the chopped nuts, dried fruit, barberries (or alternative berries), sunflower seeds, and pumpkin seeds into a bowl. Mix thoroughly, pressing the mixture together so it forms a sticky dough.
- Press the Mixture: Transfer the mixture onto the lined tray and press it tightly with a flat object such as the bottom of a glass or cup, ensuring it is compact and firmly packed. Depending on the tray size, you can spread it across or stack it to get thicker bars.
- Freeze: Place the tray in the freezer for 30 minutes to chill the bars and help them firm up for easier cutting.
- Melt the Chocolate: While the bars are chilling, melt the dark chocolate in a double boiler or microwave in short bursts, stirring until smooth and fully melted.
- Cut and Coat: Once chilled, cut the mixture into your preferred bar size and drizzle or pour melted chocolate over each bar.
- Set and Store: Allow the chocolate to harden at room temperature or in the fridge before serving. Store the bars in an airtight container in the refrigerator for freshness.
