Ingredients
For the Chocolate Cake
- 1/2 cup (60g) all-purpose flour
- 1/4 cup (21g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon espresso powder (optional)
- 1/2 teaspoon fine sea salt
- 4 eggs
- 2/3 cup (133g) granulated sugar
- 1/4 cup neutral oil (such as avocado oil or canola oil)
- 1 teaspoon vanilla extract
For the Cream Cheese Filling
- 1 (8-ounce) brick cream cheese (room temperature)
- 1 cup (120g) powdered sugar (sifted)
- 4 tablespoons butter (softened)
- 1 teaspoon vanilla extract
Instructions
- Prepare the baking pan: Heat oven to 350°F. Line a 15 x 10-inch jelly roll pan with parchment paper, leaving an extra 1-inch of parchment sticking up on both 15-inch sides for easy lifting later. To help parchment stick better, sprinkle a little water on the pan before pressing the parchment down or lightly mist the parchment with cooking spray for easier cake release.
- Mix dry ingredients: In a medium bowl, whisk together the flour, unsweetened cocoa powder, baking powder, espresso powder (if using), and fine sea salt until evenly combined. Set aside.
- Beat wet ingredients: In a separate bowl, whisk the eggs and granulated sugar together for 1 minute until thick and slightly frothy. Add the neutral oil and vanilla extract, whisking just to combine.
- Combine wet and dry mixtures: Gently fold the flour mixture into the wet ingredients using a rubber spatula, stirring until just combined. Be careful not to overmix to maintain the cake's tenderness.
- Bake the cake: Spread the batter evenly into the prepared jelly roll pan. Bake for about 11 minutes, or until the top of the cake springs back when touched lightly.
- Roll the cake: Very carefully lift the parchment paper and cake out onto a flat, heat-safe surface. While still warm but manageable, slowly roll the cake from the short end to the other short end using your hands. Transfer the rolled cake to a wire rack and let cool to room temperature.
- Make the cream cheese filling: While the cake cools, whisk together the room temperature cream cheese, sifted powdered sugar, softened butter, and vanilla extract in a mixing bowl until smooth. Adjust thickness if needed by adding more powdered sugar to thicken or a small amount of water to thin. The filling should be spreadable but not runny.
- Fill and re-roll the cake: Once the cake has cooled, carefully unroll it on a flat surface. Spread the cream cheese filling evenly over the cake, leaving a 3/4-inch border around the edges. Gently roll the cake up again, peeling the parchment paper away as you roll completely to remove it.
- Chill: Wrap the filled chocolate roll tightly in plastic wrap and refrigerate for at least one hour to set the filling and flavors.
- Serve: Remove from fridge, unwrap, and transfer the chocolate roll to a serving dish. Optionally dust with powdered sugar on all sides. Slice into servings and enjoy.
- Storage: Rewrap any leftovers tightly in plastic wrap and store in the refrigerator for up to 3 days.
Notes
- Espresso powder enhances the chocolate flavor but is optional.
- Be careful rolling the cake while warm to avoid cracking.
- Adjust cream cheese filling consistency as needed with powdered sugar or small amounts of water.
- Use a jelly roll pan for optimal cake thickness and rolling ease.
- For best results, cream cheese and butter should be at room temperature prior to mixing.
- Dusting with powdered sugar is optional but adds an elegant finish.
- Leftover cake roll is best kept refrigerated and consumed within 3 days.
