This Cilantro Lime Avocado Cucumber Salad with Tomatoes is a vibrant and refreshing vegan salad featuring crisp cucumbers, creamy avocados, juicy cherry tomatoes, and protein-packed chickpeas. Tossed in a zesty and creamy cilantro lime dressing, this salad is perfect as a summer side dish or a light, satisfying lunch when stuffed into a pita.

  • Total Time: 15 minutes
  • Yield: 6-10 servings

Ingredients

Salad Ingredients

  • 3-4 cups thinly sliced cucumber (about 2 medium English cucumbers, quartered and sliced)
  • 10 oz cherry or grape tomatoes, halved
  • 2 medium avocados, peeled, pitted, and diced
  • 1/2 cup diced red onion
  • 1 (15 oz) can chickpeas, drained and rinsed
  • Fresh cilantro for garnish, optional

Cilantro Lime Dressing

  • 1/2 cup olive oil
  • 1/3 cup fresh lime juice
  • 1/2 cup packed fresh cilantro leaves
  • 2 cloves garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon pure maple syrup
  • Salt and black pepper to taste (approximately 1/2 teaspoon salt and 1/4 teaspoon black pepper)

Instructions

  1. Make the Dressing: Add olive oil, fresh lime juice, cilantro leaves, garlic cloves, Dijon mustard, maple syrup, salt, and black pepper to a blender or food processor. Blend until the mixture is completely smooth and creamy. Taste and adjust salt and pepper to your preference.
  2. Prepare the Salad: In a large bowl, combine the sliced cucumbers, halved tomatoes, diced red onion, diced avocados, and rinsed chickpeas. Pour the cilantro lime dressing over the salad ingredients.
  3. Toss and Serve: Gently toss the salad to evenly coat all ingredients with the dressing. Garnish with extra chopped fresh cilantro if desired. Serve immediately or chill in the refrigerator until ready to serve.

Notes

  • The salad serves 6-10 people depending on serving size.
  • The dressing makes slightly more than needed, allowing you to add more for extra flavor or save for another use.
  • For best texture, add the avocado just before serving to prevent browning.
  • This salad is ideal for a light lunch or as a refreshing side dish during warm weather.
