Ingredients
Steak Marinade
- 1 ¼ pounds flank steak
- ⅓ cup olive oil
- 1 lime, zested and juiced
- 1 tablespoon minced garlic
- ½ cup minced cilantro
- 1 ½ teaspoons salt
- ½ teaspoon pepper
Bowl Components
- 2 cups cooked white rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 avocado
- 1 batch cilantro lime crema (prepared separately)
Instructions
- Prepare the Steak Marinade: In a bowl, whisk together olive oil, lime juice and zest, minced garlic, minced cilantro, salt, and pepper until well combined. This flavorful marinade will tenderize and season the steak.
- Marinate the Steak: Place the flank steak in a shallow dish and pour the marinade over it, ensuring it’s fully coated. Cover and refrigerate for at least 1 hour to allow the flavors to infuse the meat.
- Cook the Steak: Preheat a cast iron pan over medium-high heat. Once hot, add the steak and sear for 3-4 minutes on each side until it reaches your desired internal temperature, about 145°F for medium to medium-well doneness.
- Rest and Slice the Steak: Remove the steak from the pan and let it rest for 10 minutes to redistribute juices. Then slice into strips or cubes for serving.
- Assemble the Bowls: Divide cooked white rice into bowls, then layer with black beans, corn, sliced avocado, and the sliced steak. Top each bowl with a generous drizzle of cilantro lime crema.
- Optional Add-ins: Enhance your bowls by adding chopped lettuce, sautéed bell peppers, and onions if desired. Serve immediately and enjoy!
Notes
- Marinating the steak for at least an hour enhances flavor and tenderness but can be done overnight for more intensity.
- The cilantro lime crema adds a creamy, tangy finish; you can prepare this ahead or use a store-bought alternative if pressed for time.
- Use a meat thermometer to check steak doneness precisely to avoid overcooking.
- Feel free to swap white rice with brown rice or cauliflower rice for a healthier twist.
