  • Total Time: 2 hours 35 minutes
  • Yield: 4 servings

Ingredients

Steak and Marinade

  • 2 lbs flank steak
  • 1/2 cup avocado or olive oil
  • Zest of 1 lime
  • Juice of 2 limes
  • 4 cloves fresh garlic, minced or finely chopped
  • 1/2 cup chopped cilantro
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper

Bowl Components

  • 4 cups cooked rice or riced cauliflower
  • 2 avocados, sliced
  • 1 can (15 oz) black beans, heated
  • 1 can (15 oz) corn, heated
  • 1 cup shredded cheddar cheese
  • 1/2 red onion, diced

Lime Crema

  • 1 cup sour cream
  • 2 teaspoons Tajin seasoning
  • Juice of 1 lime

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together the avocado or olive oil, lime zest, lime juice, minced garlic, chopped cilantro, kosher salt, and freshly ground black pepper until well combined.
  2. Marinate the Steak: Place the flank steak in a shallow dish or a zip-top bag. Pour the marinade over the steak, ensuring both sides are fully coated. Cover the dish or seal the bag and refrigerate for 30 minutes up to 3 hours to allow the flavors to infuse.
  3. Preheat the Grill: Heat your grill to medium-high heat, preparing it for cooking the steak.
  4. Grill the Steak: Place the marinated flank steak on the grill. Cook for 10 minutes on one side, then flip and grill for another 10 minutes or until the steak reaches your desired level of doneness.
  5. Rest and Slice the Steak: Remove the steak from the grill and transfer it to a plate or cutting board. Let it rest for 5 to 10 minutes to retain its juices. Then slice the steak thinly against the grain or into cubes as preferred.
  6. Assemble the Bowls: In individual serving bowls, layer the cooked rice or riced cauliflower, grilled steak slices, sliced avocado, heated black beans and corn, shredded cheddar cheese, and diced red onion.
  7. Make the Lime Crema: In a small bowl, mix together sour cream, Tajin seasoning, and lime juice until smooth and creamy.
  8. Finish and Serve: Drizzle the lime crema over each assembled bowl and serve immediately for a fresh, flavorful meal.

Notes

  • For an extra layer of flavor, substitute the plain rice with cilantro lime rice.
  • Additional topping ideas to customize your bowls include black olives, bell pepper, grilled onions, and jalapeños.
  • Adjust marinating time according to your schedule, but note that longer marinating enhances the flavor and tenderness of the steak.
  • Letting the steak rest after grilling is crucial for juiciness and flavor retention.
