  • Total Time: 40 minutes
  • Yield: 18 cookies

Ingredients

Sugar Cookies

  • 2 ¾ cups all-purpose flour (stir, spoon & level)
  • ¼ tsp baking soda
  • ¼ tsp cream of tartar
  • ½ tsp salt
  • ½ cup unsalted butter (1 stick, room temperature)
  • 10 Tbsp granulated sugar (½ cup plus 2 Tbsp)
  • 6 Tbsp powdered sugar
  • 6 Tbsp oil (canola or vegetable)
  • 1 Tbsp water
  • 1 large egg
  • ½ tsp vanilla extract
  • 2 Tbsp extra granulated sugar (for flattening the cookies)

Cinnamon Brown Sugar Topping

  • 6 Tbsp unsalted butter (room temperature, softened)
  • ½ cup light brown sugar (gently packed)
  • ¼ cup all-purpose flour (stir, spoon & level)
  • 2 Tbsp ground cinnamon

Cream Cheese Frosting

  • 4 oz block-style cream cheese (cold)
  • 4 Tbsp unsalted butter (room temperature)
  • ½ cup powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F (177°C). Line two half sheet pans with silicone baking mats or parchment paper and set aside to keep cookies from sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt. Set this mixture aside until needed.
  3. Cream Butter and Sugars: Using a stand mixer fitted with the paddle attachment, cream together the room temperature butter, granulated sugar, and powdered sugar until the mixture is smooth and creamy.
  4. Add Wet Ingredients: Add the oil, water, egg, and vanilla extract to the creamed mixture and mix well, scraping the bowl as needed to ensure all ingredients are fully incorporated.
  5. Combine Dry and Wet Mixtures: Add all of the dry ingredients to the wet ingredients at once, mixing just until everything comes together in a soft dough.
  6. Portion Cookie Dough: Using a #30 cookie scoop (approximately 2 tablespoons), portion dough balls onto prepared baking sheets spaced 2-3 inches apart, no more than 9 per tray. Roll each dough ball until smooth and round with your hands.
  7. Create Sugar Wells: Place 2 tablespoons of granulated sugar in a small bowl. Dip the bottom of a cup into the sugar, then press the cup into the center of each dough ball with a gentle rocking motion to create a half-inch-thick well in the middle of the cookie dough. Set aside.
  8. Prepare Cinnamon Brown Sugar Topping: In a medium bowl, stir together the softened butter, light brown sugar, flour, and ground cinnamon until well combined. It's easiest if the butter is soft and cut into small pieces before mixing.
  9. Top Cookies: Divide the cinnamon topping evenly among the 18 cookies, using approximately 1 ½ teaspoons per cookie. Use your finger to gently spread the topping towards the edges of the well, keeping it inside the indentation to avoid melting over the edges.
  10. Bake Cookies: Bake the cookies in the preheated oven at 350°F for 9-10 minutes. Avoid overbaking; the cookies will remain matte and will not brown at the edges. After baking, allow the cookies to cool completely on the baking tray.
  11. Make Cream Cheese Frosting: While the cookies cool, beat together the cold cream cheese and room temperature butter using an electric hand mixer until smooth. Add powdered sugar and vanilla extract and mix until fully combined into a creamy frosting.
  12. Pipe Frosting on Cookies: Transfer the cream cheese frosting to a pastry bag fitted with a Wilton #12 round tip. Pipe a thin swirl of frosting starting from the center and working outward on each cookie, leaving some space so the cinnamon topping is still visible underneath.
  13. Serve or Store: Enjoy the cookies immediately or cover and refrigerate for later consumption to keep the frosting fresh.

Notes

  • For best results, measure flour using the stir, spoon, and level method to prevent dense cookies.
  • Make sure the butter for the cinnamon topping is softened but not melted to achieve the right texture.
  • Do not overbake cookies to maintain their soft texture and matte appearance.
  • Use a silicone baking mat or parchment paper to prevent sticking and promote even baking.
  • Chilling the cream cheese before frosting helps create a smooth, fluffy texture.
