Apple Pie Filling

  • 3 tablespoons unsalted butter
  • 4 apples (peeled and diced)
  • ¼ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • ⅓ cup granulated white sugar
  • 1 tablespoon cornstarch

  • ½ cup heavy cream
  • ½ cup light brown sugar
  • 1 tbsp ground cinnamon
  • pinch salt
  • ¼ cup unsalted butter (room temperature)

Frosting

  • 2 cups confectioners' sugar
  • 2 tablespoons whole milk
  • 1 tablespoon maple syrup

Instructions

  1. Prepare Apple Pie Filling: Melt 3 tablespoons of unsalted butter in a large saucepan over medium-low heat. Add the peeled and diced apples, ¼ teaspoon kosher salt, 1 teaspoon ground cinnamon, 1 tablespoon lemon juice, and ⅓ cup granulated sugar. Stir to combine and cook for 5-8 minutes until apples soften. Remove from heat and stir in 1 tablespoon cornstarch. Allow the filling to cool completely.
  2. Activate Yeast: Warm 1 cup of whole milk in a small saucepan over medium-low heat until lukewarm. Pour into a medium bowl, add 2 ¼ tsp active dry yeast, and stir. Let sit for 5-10 minutes until foamy and bubbly, indicating yeast activation.
  3. Make Dough: In the bowl of a stand mixer fitted with a dough hook, combine 5 cups all-purpose flour, 1 tsp kosher salt, a pinch of ground cinnamon, a pinch of ground nutmeg, and ¼ cup granulated sugar; mix to combine. Pour in the foamed yeast mixture, 6 tbsp unsalted butter (room temperature), and 2 large eggs. Mix on low speed for 2-3 minutes, then increase to medium speed and mix for another 3 minutes until a smooth, slightly sticky dough forms.
  4. First Rise: Remove dough from mixer, lightly oil the bowl, place dough back inside, cover loosely with clingfilm, and let it rise at room temperature for about 1 to 1½ hours or until doubled in size.
  5. Prepare Baking Dish and Roll Out Dough: Butter a 9x13-inch baking dish. Turn the risen dough onto a floured surface and roll into a large rectangle approximately 18 inches long by 12 inches wide using a floured rolling pin.
  6. Assemble Cinnamon Rolls: Mix ½ cup light brown sugar, 1 tbsp ground cinnamon, and a pinch of salt in a small bowl.
