Ingredients
Sandwich Base
- 4 slices sandwich bread
- Vegan butter, as needed
Chickpea Filling
- 1 yellow onion, finely chopped
- 1 bay leaf
- 2.5 tsp medium curry powder
- 1/4 tsp chili powder (optional)
- 2 tins (800g) chickpeas, drained and rinsed
- 5 tbsp vegan mayonnaise
- 2 tbsp vegan creme fraiche (or vegan Greek yoghurt)
- 1 tbsp lemon juice
- 2.5 tbsp apricot jam
- 1 tbsp tomato puree
- 1 tsp salt
- Black pepper, to taste
- 1 tbsp oil (for frying)
Instructions
- Prepare the Onion: Finely chop the yellow onion. Heat 1 tablespoon of oil in a pan over medium heat. Add the onion and bay leaf and fry for 5 minutes until the onion is softened and translucent.
- Add Spices: Stir in the curry powder and chili powder, if using, and cook for 30 seconds to release the flavors. Remove the pan from heat.
- Mash Chickpeas: Drain and rinse the chickpeas thoroughly. Place them in a bowl and use the back of a fork to mash about three-quarters of the chickpeas, leaving some whole for texture.
- Combine Ingredients: Add the cooked onion mixture, vegan mayonnaise, vegan creme fraiche, lemon juice, apricot jam, tomato puree, and salt to the mashed chickpeas. Stir thoroughly to combine all ingredients evenly. Taste the mixture and season generously with black pepper. Adjust sweetness with extra apricot jam or heat with additional chili powder if desired.
- Assemble and Serve: Spread vegan butter on sandwich bread if desired. Spoon the chickpea filling onto bread slices and assemble into sandwiches. Alternatively, serve the filling over a large bed of lettuce for a refreshing salad option. Enjoy immediately.
Notes
- For additional heat, increase chili powder or add a splash of hot sauce.
- Apricot jam can be substituted with mango chutney for a different flavor profile.
- Use gluten-free bread to make the sandwich gluten-free.
- The chickpea mixture can be stored in an airtight container in the refrigerator for up to 2 days.
- To make the sandwich dairy-free and vegan, ensure all vegan condiments are plant-based.
