- ½ cup full-fat or 2% cottage cheese

- 1 oz shredded mozzarella cheese, divided

- 1-2 Tablespoons chopped bell pepper
- 1-2 Tablespoons chopped yellow onion
- 4 turkey pepperoni slices, chopped (Applegate recommended)
Instructions
- Combine Base Ingredients: In a microwave-safe bowl, add cottage cheese, marinara sauce, half of the shredded mozzarella cheese, and Italian seasoning. Stir everything together until well combined.
- Microwave Mixture: Microwave the combined mixture for 30 seconds to heat and slightly melt the cheeses, helping blend the flavors.
- Add Vegetables: Stir in the chopped bell pepper and yellow onion to the warmed mixture, incorporating the fresh veggies evenly.
- Add Remaining Cheese and Pepperoni: Sprinkle the remaining mozzarella cheese over the top along with the chopped turkey pepperoni slices.
- Final Microwave Melt: Microwave the bowl for another 30–45 seconds, or until the cheese on top has fully melted and the entire dish is warmed through.
- Optional Garnish and Serve: For added heat, sprinkle crushed red pepper flakes on top if desired. Serve warm and enjoy with mini bell peppers or crackers for dipping.

- Storage: Best enjoyed fresh but leftovers can be refrigerated for up to 3 days. Reheat in microwave, oven, or air fryer until warm and melty.
- Oven method: Assemble in an oven-safe ramekin and bake at 375°F for 10–12 minutes until bubbly and golden.
- Air fryer method: Air fry at 375°F for 6–8 minutes. For a golden top, increase to 400°F for the last 2 minutes.
- Make it vegetarian by omitting turkey pepperoni and adding mushrooms, olives, or spinach.
