Ingredients
Bagel Dough
- 1 cup self-rising flour
- 1 cup full-fat cottage cheese
Topping & Egg Wash
- 1 large egg, beaten (for egg wash)
- Toppings: sesame seeds, everything bagel seasoning, shredded asiago cheese, or poppy seeds (optional)
Instructions
- Preheat the oven or air fryer: For oven baking, preheat to 375°F and position the rack to the top. Line a large baking sheet with parchment paper. For air frying, preheat air fryer to 350°F for 5 minutes and spray the basket with nonstick spray.
- Blend cottage cheese: Place the full-fat cottage cheese in a food processor or blender and pulse on high until smooth, scraping the sides as needed to achieve a creamy texture.
- Mix dough: Transfer the blended cottage cheese to a medium bowl, add the self-rising flour, and mix until the dough comes together and starts to pull away from the bowl sides.
- Knead dough: Turn the dough onto a generously floured surface and knead 8-10 times until smooth and no longer sticky. Add flour as needed to achieve the right consistency.
- Shape bagels: Divide the dough ball into 4 equal portions (approx. 80g each). Roll each piece into a 6-7 inch rope about 1 inch thick, then join ends to form a circle, pinching the seam tightly.
- Apply egg wash and toppings: Brush the bagel tops with beaten egg and sprinkle with your choice of toppings like sesame seeds, everything seasoning, asiago cheese, or poppy seeds.
- Bake the bagels: Place bagels on the prepared baking sheet and bake in the oven for 25-30 minutes until puffed and golden brown. Allow to cool 15 minutes before slicing.
- Alternatively, air fry: Place bagels in the preheated air fryer basket and cook for 12-14 minutes until golden and cooked through.
- Storage: Store cooled bagels in an airtight container at room temperature for up to 4 days.
Notes
- For gluten-free bagels, substitute self-rising flour with 1 cup gluten-free flour blend plus 1 tsp baking powder and 1/2 tsp kosher salt.
- Full-fat cottage cheese yields the best dough consistency; Greek yogurt can be used as a substitute.
- If you don't have self-rising flour, mix all-purpose flour with baking powder and salt as noted above.
- Measure flour properly using the spoon and level method or by weight for best results.
- Add flour tablespoon by tablespoon during kneading if dough is sticky to achieve a workable consistency.
