Chicken and Seasonings
- 4 (6-7 oz.) boneless, skinless chicken breasts
- 1 ½ teaspoons fresh rosemary, finely chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
Vegetables and Sauce
- 1 medium onion, cut into thin slices
- 2 teaspoons extra-virgin olive oil
- ¼ cup cranberry sauce
- ¼ cup balsamic vinegar
- ⅓ cup red wine (or substitute low-sodium chicken broth)
- 1 tablespoon unsalted butter (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F to prepare for finishing the chicken in a hot environment for even cooking.
- Sauté Onions: Heat olive oil in a large oven-safe skillet over medium-high heat, then add the sliced onion and sauté until tender, about 5 minutes.
- Season and Sear Chicken: Season the chicken breasts on both sides with rosemary, salt, and pepper. Push the onions to the side of the skillet, increase heat to medium-high, and add the chicken. Sear each side for 3-4 minutes until nicely browned.
- Add Sauce Ingredients: Pour in the cranberry sauce, balsamic vinegar, and red wine or chicken broth. Bring the mixture to a simmer, scraping the pan to loosen browned bits, and turn chicken in the sauce to coat well.
- Finish Cooking in Oven: Transfer the skillet to the preheated oven and cook for 10-15 minutes, or until the chicken breasts are fully cooked through. Use a meat thermometer to ensure an internal temperature of 165°F. Alternatively, cover the skillet and cook on stovetop over medium-low heat for 10-15 minutes until cooked.
- Add Butter and Serve: Carefully remove the skillet from the oven. Stir in the optional butter until melted and incorporated into the sauce. Serve the chicken topped with onions and extra sauce drizzled over.
Notes
- Cranberry Sauce: Using a freshly made cranberry sauce, like a simple 15-minute recipe, enhances the dish's flavor. Store-bought canned cranberry sauce can also be used for convenience.
- Leftovers: Store cooled leftover chicken in a covered container in the refrigerator for 4-5 days. Slice before reheating to ensure quick and even warming without drying out. Reheat in a covered skillet over medium-low heat or in the microwave.
