This Creamy Baked Double Cheese and Spinach Dip is a rich and flavorful appetizer combining cultured cream cheese, tangy yogurt, shredded sharp cheddar, and nutritious spinach with a zesty ranch dressing mix. Baked to perfection and topped with extra melted cheddar and fresh green onions, it's perfect for serving with tortilla chips or fresh vegetables at any gathering.

  • Total Time: 35 minutes
  • Yield: 6 servings

Ingredients

Base Ingredients

  • 8 ounces Nancy's Organic Cultured Cream Cheese
  • 1 cup Nancy's Organic Whole Milk Yogurt
  • 1 cup shredded sharp cheddar cheese
  • 8 ounces frozen spinach (thawed and drained)
  • 1 ounce package ranch dressing mix

Topping and Garnish

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions (thinly sliced)
  • Tortilla chips or fresh vegetables (to serve)

Instructions

  1. Preheat oven: Preheat your oven to 350 degrees Fahrenheit to ensure it reaches the right temperature for baking the dip evenly.
  2. Mix ingredients: In the bowl of an electric mixer, combine the cream cheese, whole milk yogurt, 1 cup shredded sharp cheddar cheese, thawed and drained spinach, and ranch dressing mix. Mix until the ingredients are thoroughly combined and smooth.
  3. Bake the dip: Spoon the combined mixture into a shallow baking dish and bake in the preheated oven for 20 minutes to allow the flavors to meld and the dip to heat through.
  4. Add cheese topping: Remove the dish from the oven and sprinkle the additional 1/2 cup shredded cheddar cheese evenly over the top. Return the dish to the oven and bake for about five more minutes until the cheese topping melts and becomes bubbly.
  5. Garnish and serve: Remove from the oven and garnish the dip with thinly sliced green onions. Serve warm with tortilla chips or fresh vegetables for dipping.

Notes

  • Make sure to thoroughly thaw and drain the frozen spinach to prevent excess moisture in the dip.
  • For a smoother texture, you can blend the mixture briefly before baking.
  • This dip can be prepared ahead of time and baked just before serving.
  • Leftovers can be refrigerated and reheated gently in the oven or microwave.
  • Feel free to substitute the ranch dressing mix with your favorite seasoning blend for a different flavor profile.
