Butternut Squash Sauce
- 5 cups chopped butternut squash
- 1 tablespoon extra virgin olive oil
- 1 shallot, minced
- 1 garlic clove, minced
- 1 tablespoon fresh sage, minced
- 1/2 cup ricotta cheese
- 1 cup grated parmesan cheese, divided
- Salt and pepper, to taste
Filling
- 2 cups shredded chicken (leftover rotisserie chicken recommended)
- 1 cup frozen chopped spinach, thawed and excess water squeezed out
Pasta
- 9 lasagna noodles (gluten-free if needed)
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to prepare it for baking the roll-ups later.
- Cook Butternut Squash: Bring a large pot of salted water to a boil. Add the chopped butternut squash and cook for about 10 minutes until softened and fork-tender. Drain the squash using a strainer and transfer it to a food processor.
- Sauté Aromatics: In a small skillet over medium heat, warm the olive oil. Add minced shallot, garlic, and fresh sage. Cook for 2-3 minutes until the mixture is fragrant and the shallot has softened. Transfer this to the food processor with the squash.
- Prepare Sauce Base: Add ricotta, half of the parmesan cheese (1/2 cup), salt, and pepper to the food processor. Blend until smooth, scraping the sides as needed. Set this creamy butternut squash mixture aside.
- Cook Lasagna Noodles: Return the pot of salted water to a boil. Add lasagna noodles and cook according to package directions until al dente. Drain carefully, reserving 1/2 cup of the pasta cooking water.
- Mix Filling: In a bowl, combine shredded chicken and thawed, well-drained spinach. Set aside for rolling.
- Assemble Roll-Ups: Lay each cooked noodle flat on a clean surface. Spread 3-4 tablespoons of the butternut squash puree evenly along the noodle, then top with the chicken and spinach mixture. Carefully roll each noodle up and repeat for all noodles.
- Thin Remaining Sauce: Add the reserved 1/2 cup pasta water to the food processor with any remaining squash mixture and blend until smooth to thin the sauce for pouring.
- Prepare Baking Dish: Spoon about 1/2 cup of the thinned butternut squash sauce on the bottom of a 9x9-inch baking dish to prevent sticking.
- Arrange Roll-Ups: Place the rolled lasagna noodles seam side down in the prepared baking dish.
- Top with Sauce and Cheese: Pour the remaining butternut squash puree over the roll-ups, then sprinkle the remaining 1/2 cup parmesan cheese evenly on top. Cover the dish with foil.
- Bake: Bake covered at 350°F for 30 minutes until heated through.
- Broil for Finish: Remove the foil, switch the oven to broil, and bake for an additional 3-4 minutes until the top is golden and bubbly.
- Garnish and Serve: Remove from oven and garnish with additional fresh sage leaves and a sprinkle of parmesan cheese before serving.
Notes
- You can substitute shredded rotisserie chicken with cooked turkey or omit for a vegetarian version (replace chicken with extra spinach or mushrooms).
- Make sure to squeeze out excess water from the spinach to prevent soggy filling.
- Use gluten-free lasagna noodles to make this recipe gluten-free.
- Leftover roll-ups can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 1 month.
- Let roll-ups rest for a few minutes after baking to firm up for easier slicing and serving.
