Sauce

- 2 teaspoons Better than Bouillon chicken base

- 1 cup sliced mushrooms
- 2 teaspoons cornstarch
- 1/4 cup water
- 1/2 cup heavy whipping cream
Instructions
- Prepare the chicken: Trim excess fat from the chicken breasts. Slice each breast horizontally to create two thin cutlets, ensuring even thickness for quick cooking.
- Mix the flour coating: In a large mixing bowl, whisk together the all purpose flour, black pepper, garlic salt, and onion powder to create the seasoned dredging mix.
- Dredge the chicken: Coat each chicken cutlet with the flour mixture, covering both sides. Some flour mixture will remain unused; set coated chicken aside.
- Brown the chicken: Heat olive oil in a skillet over medium-high heat until shimmering. Add the chicken cutlets and brown on each side for about 10-12 minutes total. Remove the chicken from the skillet and set aside; do not clean the pan.
- Sauté aromatics: Add butter to the skillet, then stir in minced garlic and chopped onion. Cook for about one minute until the onion softens and the garlic is fragrant.
- Deglaze and add flavor: Pour in the dry white wine and add the capers. Bring the mixture to a gentle boil to reduce slightly and lift flavors from the pan.
- Add chicken base, lemon, and mushrooms: Stir in the chicken base, lemon juice, and sliced mushrooms, combining well.
- Thicken the sauce: Lower the heat to low. Mix cornstarch and water to form a slurry, then pour it into the skillet while stirring to thicken the sauce smoothly.
- Finish the sauce and reheat chicken: Stir in the heavy whipping cream, then nestle the browned chicken cutlets back into the skillet to heat through in the creamy sauce for a few minutes.
