- 2 large chicken breasts
- 2 (10-ounce) cans Rotel (tomatoes with green chilies), undrained
- 1 (8-ounce) can spicy tomato sauce
- 3 cups chicken broth
- 1.5 tablespoons adobo sauce (from a can of chipotles)
Finishing Ingredients
- 1/2 cup heavy whipping cream
- 2 cups shredded cheddar cheese
Instructions
- Sauté Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped bell peppers and onion and sauté until softened, about 5-7 minutes.
- Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Add Main Ingredients and Spices: Place the chicken breasts into the pot. Add chili powder, paprika, cumin, garlic powder, onion powder, salt, the undrained cans of Rotel, spicy tomato sauce, chicken broth, and adobo sauce. Stir gently to combine.
- Simmer Soup: Cover the pot and bring the mixture to a simmer over medium heat. Then reduce to low and cook for 20-25 minutes, or until the chicken is fully cooked through.
- Shred Chicken: Remove the cooked chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup pot and stir to combine.
- Add Cream and Cheese: Stir in the heavy whipping cream and shredded cheddar cheese until fully incorporated and melted into the soup, creating a creamy texture.
- Serve and Garnish: Ladle the soup into bowls and serve with your favorite garnishes such as sour cream, additional cheese, avocado, fresh cilantro, and lime wedges for added flavor and freshness.
Notes
- To reduce spice, omit the jalapeno or reduce the adobo sauce quantity.
- Use cooked rotisserie chicken for a quicker version.
- For a thicker soup, add a slurry of corn starch and cold water while simmering.
