Ingredients
Pasta
- 1 pound rotini, fusilli, penne or other short pasta
- Salt, for cooking water
Dressing
- 1 cup mayonnaise
- 1 cup sour cream
- 1/4 cup white vinegar
- 2 tablespoons honey
- 2 medium English cucumbers (2 pounds), peeled, seeded, and coarsely chopped (4 cups)
- 1 bunch large scallions, white and light green parts only, coarsely chopped (scant 1 cup)
- 1/2 cup chopped fresh dill
- Salt, to taste
- Freshly ground black pepper, to taste
Add-ins and Garnish
- 1 bag (12-ounce) frozen peas, thawed under cold tap water
- Fresh dill sprigs, for garnish (optional)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain the pasta and rinse under cold water to cool it quickly. Drain again thoroughly.
- Prepare the dressing: While the pasta cooks, combine the mayonnaise, sour cream, white vinegar, honey, coarsely chopped cucumbers, scallions, fresh dill, salt, and freshly ground black pepper in a food processor or blender. Process until the dressing is smooth or almost smooth, leaving a slightly chunky texture if desired.
- Toss pasta with dressing and peas: Place the drained pasta in a large bowl, pour the prepared dressing over it, and toss gently to coat evenly. Add the thawed peas and mix to combine.
- Garnish and serve: Garnish the salad with fresh dill sprigs if desired. Serve the salad warm or chilled based on preference.
Notes
- Recipe originally from 2017, retested and updated for accuracy.
- Substitution: Use thick Greek yogurt as a great alternative for sour cream.
- Make Ahead: Dressing can be made 1-2 days ahead and refrigerated until needed.
- Make Ahead: Cooked pasta can be prepared 1 day in advance, tossed with a bit of oil to prevent sticking, and refrigerated.
- Tip: To serve at room temperature, cook pasta to al dente for the best texture. If making ahead, cook it slightly beyond al dente as pasta firms up when cooled.
- The dressing is plentiful; since pasta absorbs dressing, reserve some extra dressing to refresh the salad later if necessary.
- Extra dressing can be served over baked or poached salmon as a flavorful sauce.
