Ingredients
Mango Blend
- 1 cup Mango (peeled and cubed, fresh)
- 3/4 cup Milk (dairy or almond/oat milk)
- 1/2 cup Yogurt (thick Greek yogurt)
- 1/2 teaspoon Vanilla extract
- 2 teaspoon Maple syrup (or honey, optional)
Overnight Oats Mixture
- 1 cup Rolled Oats
- 1 tablespoon Chia seeds
Garnish
- 1/3 cup Mango (diced)
- 1 tablespoon Pistachios (slivered)
Instructions
- Prepare the Mango Blend: Add the cubed mango, milk, yogurt, maple syrup, and vanilla extract to a high-speed blender. Blend on high until smooth, creating a creamy mango base for the oats.
- Mix Ingredients: In a large bowl or two jars, combine the rolled oats and chia seeds. Pour the mango blend over the oats and stir well to ensure all ingredients are fully combined. Let the mixture sit for 5 minutes to begin absorbing.
- Stir Again: After waiting, stir the mixture once more to incorporate any extra liquid sitting on top. This ensures the oats soak evenly and prevents clumps.
- Refrigerate Overnight: Transfer the mixture into jars or containers with lids. Refrigerate for at least 4 hours or overnight to allow the oats and chia seeds to fully absorb the liquid and soften.
- Serve and Garnish: In the morning, add additional milk if the oats are too thick. Garnish with diced mango and slivered pistachios. Enjoy the oats cold or warmed, based on preference.
Notes
- The recipe works well with dairy or plant-based milk such as almond or oat milk.
- Maple syrup is optional and can be replaced with honey or skipped for less sweetness.
- You can prepare this recipe in individual jars for easy grab-and-go breakfasts.
- Chia seeds help thicken the oats and add nutrition; you can adjust the quantity to your liking.
- Overnight soaking softens the oats, so make sure to refrigerate for at least 4 hours.
