A flavorful and creamy Mediterranean chicken dish served with tender zucchini noodles. This recipe features juicy chicken breast strips cooked in a rich coconut milk sauce with garlic, sun-dried tomatoes, and kalamata olives, all tossed together with fresh spiralized zucchini for a light yet satisfying meal perfect for a quick weeknight dinner.

  • Total Time: 30 minutes
  • Yield: 3 servings

Ingredients

Protein and Vegetables

  • 1 lb boneless skinless chicken breasts, cut into strips
  • 2 to 4 medium-sized zucchini squash, spiralized

Cooking and Flavoring

  • 2 Tbsp avocado oil
  • Sea salt, to taste
  • Black pepper, to taste
  • 4 cloves garlic, minced
  • 1 15-oz. can coconut milk
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup kalamata olives, chopped
  • 2 Tbsp gluten-free all-purpose flour or tapioca flour

Instructions

  1. Prepare Zucchini Noodles: Spiralize the zucchini using a spiralizer to create fresh zoodles, setting them aside for later use.
  2. Cook Chicken: Heat the avocado oil in a large skillet over medium-high heat. Once hot, add the chicken strips in an even layer. Season with sea salt and black pepper. Let the chicken brown undisturbed for 3 minutes, then stir and cook for an additional 3 to 5 minutes until golden crust forms.
  3. Make the Sauce: Stir in the minced garlic, coconut milk, sun-dried tomatoes, and chopped kalamata olives. Bring the mixture to a full boil. Gradually whisk in the gluten-free flour to remove clumps and continue boiling for about 4 minutes until the sauce thickens.
  4. Add Zoodles and Simmer: Add the zucchini noodles to the skillet, stirring to coat them in the sauce as best as possible. Cover with a lid and cook for 3 to 5 minutes until zucchini noodles are al dente to your liking.
  5. Final Seasoning and Serve: Taste the sauce and season with additional sea salt if needed. Optionally, add a squeeze of fresh lemon juice and grate fresh parmesan cheese over the dish before serving. Enjoy your creamy Mediterranean chicken and zoodles!

Notes

  • Use gluten-free flour or tapioca flour to keep the recipe gluten-free.
  • Adjust cooking time for zucchini noodles based on your preferred texture.
  • For extra flavor, add a splash of lemon juice before serving.
  • Parmesan cheese is optional but adds a creamy, savory finish.
  • Ensure the skillet is large enough (12-inch recommended) for even cooking.
