Ingredients
Pasta
- 8 ounces pasta (such as spaghetti, linguine, or bucatini)
Sauce
- 3 tablespoons unsalted butter
- 2 large garlic cloves (finely grated or minced)
- 2 tablespoons white miso paste
- 1 tablespoon grated Parmesan cheese (plus more for serving)
- 1 teaspoon soy sauce
- 1 teaspoon honey or brown sugar
- 1/2 teaspoon red pepper flakes (optional)
- 1/3 to 1/2 cup reserved pasta water
- 1 teaspoon lemon juice
- Freshly ground black pepper (to taste)
Garnish
- 2 tablespoons finely chopped chives or scallions
- Toasted panko or breadcrumbs (optional, for serving)
Instructions
- Cook pasta: Bring a large pot of well-salted water to a boil. Cook the pasta until just shy of al dente. Reserve at least 1 cup of pasta water, then drain the pasta.
- Prepare garlic butter: In a large skillet over medium-low heat, melt the butter. Add the finely grated or minced garlic and cook for about 30 seconds until fragrant, being careful not to let it brown.
- Make the sauce: Add the white miso paste, grated Parmesan cheese, soy sauce, honey or brown sugar, and red pepper flakes if using to the skillet. Stir continuously until the mixture is smooth and combined.
- Add pasta water: Pour in 1/3 cup of the reserved pasta water and stir until the sauce turns glossy and lightly creamy.
- Toss pasta in sauce: Add the drained pasta to the skillet and toss vigorously for 1 to 2 minutes, adding more reserved pasta water as needed until the sauce is silky and clings evenly to the pasta.
- Finish and serve: Turn off the heat and stir in the lemon juice and freshly ground black pepper. Taste and adjust seasoning as necessary. Serve immediately topped with extra Parmesan cheese, chopped chives or scallions, and toasted panko or breadcrumbs if desired.
Notes
- Reserve enough pasta water to adjust the sauce consistency to your liking; this liquid helps create the creamy texture.
- If white miso paste is unavailable, yellow miso can be used as a substitute but will alter the flavor slightly.
- For a vegan variation, substitute butter with plant-based margarine and Parmesan with nutritional yeast.
- To intensify the garlic flavor, you can add an extra clove or use roasted garlic instead of fresh.
- Serve immediately as the sauce clings best to warm pasta; leftover pasta may require reheating with added water or butter to loosen the sauce.
