Ingredients
Sausage and Herbs
- 8 vegan sausages
- 1.5 tsp dried Italian herbs
Vegetables and Sauce
- 1 red onion, finely chopped
- 4 garlic cloves, crushed
- 1 tin / 400g chopped tomatoes
- 250ml water
- 8 sun dried tomatoes, in oil, finely chopped
- 10 cherry tomatoes, quartered
- 1/2 tsp salt
- Salt and pepper to taste
Creamy and Cheese Elements
- 125ml / 1/2 cup vegan double cream
- 2 tbsp nutritional yeast or grated vegan parmesan
- 1/4-1/2 tsp dried chilli flakes (optional)
Main
- 750g gnocchi
For Cooking
- 2 tbsp oil (divided for frying and sautéing)
Instructions
- Prepare the Sausages: Crumble or cut the vegan sausages into small pieces. Heat 1 tablespoon of oil in a pan over medium heat. Add the sausage pieces and fry for a few minutes until they become crispy and golden. Stir in the dried Italian herbs, then transfer the cooked sausage to a bowl and set aside.
- Sauté Onion and Garlic: Using the same pan, heat another tablespoon of oil. Add the finely chopped red onion and cook for a few minutes until softened. Add the crushed garlic and sauté for an additional minute to release its fragrance.
- Add Tomatoes and Simmer: Add the finely chopped sun dried tomatoes, quartered cherry tomatoes, chopped canned tomatoes, water, salt, and pepper to the pan. Stir to combine all ingredients.
- Simmer the Sauce: Bring the mixture to a gentle simmer and cook for 10-15 minutes until the sauce thickens and flavors meld together.
- Add Cream, Nutritional Yeast, and Gnocchi: Stir in the vegan double cream and nutritional yeast (or vegan parmesan). Then, add the gnocchi along with dried chilli flakes if using. Cook for 2-3 minutes until the gnocchi are tender and cooked through.
- Combine and Heat Through: Return the crispy sausage pieces to the pan and stir well to combine. Cook for another minute or so until everything is heated through.
- Serve: Serve the creamy sun dried tomato sausage gnocchi hot, topped with extra vegan parmesan and freshly ground black pepper to taste.
Notes
- You can adjust the amount of dried chilli flakes according to your spice preference or omit them for a milder dish.
- For best texture, use fresh or packaged gnocchi – do not overcook them to avoid them becoming mushy.
- If vegan double cream is unavailable, canned coconut milk or another plant-based cream alternative can be used.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently on the stovetop.
