This creamy, nutritious white bean hummus is a flavorful twist on the classic chickpea version, featuring Great Northern or Cannellini beans blended with tahini, fresh lemon juice, garlic, and olive oil for a zesty, smooth dip that's perfect for snacking or entertaining.

  • Total Time: 10 minutes
  • Yield: About 2 cups (8 servings)

Ingredients

Hummus Ingredients

  • 2 (15.5-ounce) cans Great Northern, Cannellini, or white beans, drained, liquid reserved
  • ½ cup tahini
  • 3 tablespoons extra-virgin olive oil, plus more for serving
  • 1 teaspoon lemon zest (from 1 lemon)
  • ¼ cup fresh lemon juice (from 2 lemons)
  • 3 garlic cloves
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon paprika, plus more for serving

Instructions

  1. Prepare Ingredients: Drain the canned white beans, reserving the liquid, and measure out the tahini, olive oil, lemon zest, lemon juice, garlic cloves, garlic powder, salt, and paprika.
  2. Add Ingredients to Blender: Place the beans, ¼ cup of the reserved bean liquid, tahini, olive oil, lemon zest, lemon juice, garlic cloves, garlic powder, and sea salt into a high-powered blender or food processor.
  3. Blend Ingredients: Start blending on low speed to combine the ingredients. Gradually increase to high speed and blend for about 5 minutes until the mixture becomes smooth and creamy.
  4. Adjust Texture and Flavor: If the hummus is too thick, add additional reserved bean liquid one tablespoon at a time to reach your desired creaminess. Taste and adjust salt as needed.
  5. Serve: Spread the hummus into a shallow bowl using the back of a spoon. Drizzle additional olive oil over the top, sprinkle with paprika and chopped flat-leaf parsley if desired. Serve with pita bread and fresh vegetables for dipping.

Notes

  • For a smoother texture, peel the skins off the beans before blending if desired.
  • Adjust garlic amount according to your preference for a milder or stronger garlic flavor.
  • Keep reserved bean liquid on hand to adjust hummus consistency as needed.
  • Best served fresh but can be refrigerated in an airtight container for up to 3 days.
  • Use fresh lemon juice for the brightest flavor, avoiding bottled lemon juice.
