Ingredients

Sweet Potato Mixture

  • 4 medium sweet potatoes
  • 1 cup grated parmesan cheese, divided
  • 1/2 cup grated asiago or manchego cheese
  • Kosher salt and black pepper, to taste

Coating

  • 2 cups Panko bread crumbs
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Finishing

  • Extra virgin olive oil, for brushing
  • 6 tablespoons salted butter
  • 2 tablespoons fresh thyme leaves
  • 2 teaspoons chopped fresh sage
  • 1 pinch chili flakes (to taste)

Instructions

  1. Bake the Sweet Potatoes: Preheat the oven to 425° F. Prick the sweet potatoes all over with a fork and place them directly on the oven rack. Bake until tender, about 50 to 60 minutes. Once baked, allow them to cool completely.
  2. Prepare the Sweet Potato Mash: When cool enough to handle, peel the sweet potatoes by slipping off the skins with your hands. Place the peeled sweet potatoes in a bowl and mash thoroughly. Stir in 1/2 cup parmesan cheese, asiago or manchego cheese, and season with kosher salt and black pepper. Chill the mixture in the freezer for a few minutes to firm up slightly.
  3. Mix the Coating: In a shallow bowl, combine the Panko breadcrumbs with paprika, cayenne pepper, onion powder, and garlic powder. Line a baking sheet with parchment paper.
  4. Form and Coat the Bites: Using about 1 1/2 to 2 tablespoons of the sweet potato mixture, scoop and roll it into a cylinder shape. Place each on the prepared baking sheet. Repeat until all mixture is used. Although the mixture will be wet, this is fine. Roll each cylinder in the breadcrumb mixture to coat thoroughly, then place them back on the baking sheet. Lightly shape each into a square, and brush or mist with extra virgin olive oil.
  5. Bake Until Crispy: Bake the coated bites for 15 minutes at 425° F, then flip each piece and bake for another 15 minutes or until they’re golden brown and crisp.
  6. Prepare Herb Butter: While the bites bake, melt the salted butter in a small skillet over medium heat. Add fresh thyme leaves and cook for 1 to 2 minutes until fragrant.
  7. Finish and Serve: Drizzle the herb butter over the warm sweet potato bites. In a small bowl, mix the remaining parmesan cheese with chopped fresh sage and chili flakes, then sprinkle this mixture over the bites. Serve warm or at room temperature.

Notes

  • To Make Ahead: Prepare the bites up to 4 days in advance. To reheat, place on a baking sheet and warm in a 400° F oven for 10-15 minutes before serving.
  • To Freeze: Bake the bites as directed, allow them to cool, then freeze on a baking sheet for 1-2 hours until firm. Transfer to a freezer-safe container and keep frozen for up to 4 months. Reheat frozen bites in a 400° F oven for 15-20 minutes until heated through. Herb butter can be added before freezing or after reheating.
  • Instant Pot Alternative: Sweet potatoes can be pressure cooked in an Instant Pot (10 minutes at high pressure) instead of baking. Drain and proceed with the recipe from the mashing step.
