This Crispy Chicken Stir Fry is a quick and delicious weeknight meal featuring cornstarch-coated chicken cubes fried to a perfect crisp, then tossed with blistered green beans in a flavorful garlicky soy-ginger sauce. Ready in just 35 minutes, it delivers a perfect balance of protein and vegetables with a hint of spice.

  • Total Time: 35 minutes
  • Yield: 4-6 servings

Ingredients

Chicken

  • 2 pounds boneless, skinless chicken breast, cut into 2-inch cubes
  • 3 tablespoons cornstarch
  • 4 tablespoons toasted sesame oil, divided

Vegetables and Sauce

  • ¾ pound green beans, trimmed and cut into 3-inch pieces
  • 3 large garlic cloves, minced
  • 1 tablespoon minced peeled fresh ginger
  • ¼ cup low-sodium soy sauce or tamari
  • 1 teaspoon chili paste (such as sambal oelek)
  • ¼ teaspoon sea salt

Garnish (Optional)

  • Sesame seeds, for serving
  • Minced fresh cilantro leaves, for serving

Instructions

  1. Prepare the Chicken: In a medium-sized bowl, toss the chicken cubes with cornstarch until they are evenly coated. This coating will help achieve a crispy texture when cooked.
  2. Cook Chicken: Heat 2 tablespoons of toasted sesame oil in a large skillet or wok over medium heat. When the oil is shimmering, add the chicken in a single layer, working in batches if necessary to avoid crowding. Cook the chicken, turning frequently, until it is golden brown on all sides and cooked through, about 8 minutes. Remove chicken from the skillet and set aside on a plate. Add more oil if cooking in batches.
  3. Blister the Green Beans: Increase the heat to high and add the remaining 2 tablespoons of sesame oil to the same skillet. When the oil is hot and almost smoking, add the green beans. Stir frequently and cook until the beans are blistered and tender but still crisp, about 5 minutes. Transfer the green beans to the plate with the chicken.
  4. Make the Sauce: Reduce heat to medium-low to slightly cool the skillet. Add minced garlic, ginger, soy sauce, chili paste, and sea salt. Stir frequently and cook until the mixture is fragrant and well combined, about 1 minute.
  5. Toss Everything Together: Return the cooked chicken and green beans to the skillet. Stir well to coat all ingredients evenly with the sauce. Cook for another 1-2 minutes to meld flavors.
  6. Serve: Sprinkle with sesame seeds and chopped fresh cilantro if desired. Serve immediately while hot.

Notes

  • For extra heat, increase the chili paste or add red pepper flakes.
  • Use low-sodium soy sauce to control salt content.
  • If using tamari, the recipe is gluten-free.
  • Work in batches while cooking chicken to avoid overcrowding and ensure crispiness.
  • This dish pairs well with steamed rice or noodles.
