Vegetables
- 12 oz Baby Broccoli or Broccolini, halved and cut into 1 inch pieces
- 1 medium White Onion, medium-diced
- 2 Green Onions, thinly sliced (for serving)
Protein
- 16 oz Extra Lean Ground Beef
Pan Sauce
- ¼ cup (72g) Hoisin Sauce
- 2 Tablespoons Coconut Aminos
- 2 Tablespoons Rice Vinegar
- 2 Tablespoons Sriracha
- 2 Tablespoons Water
Other
- 1 Tablespoon Olive Oil
- 1 pinch Salt and Pepper
- 2 bags (10 oz each) Frozen Steamed Jasmine Rice or 4 cups steamed jasmine rice
Instructions
- Cook Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the halved baby broccoli and diced onion, seasoning with salt and pepper. Cook for 5 to 6 minutes, stirring every 2 minutes until the vegetables soften and develop brown spots. Remove from pan and set aside in a bowl.
- Brown Ground Beef: In the same skillet, add the ground beef. Let it brown on one side for 2 to 3 minutes before breaking it apart. Continue cooking until fully browned and cooked through.
- Prepare and Add Sauce: While the beef is cooking, mix together hoisin sauce, coconut aminos, rice vinegar, sriracha, and water in a small bowl. Pour the sauce over the cooked beef, stir to coat thoroughly, then leave the mixture untouched for 2 to 3 minutes, allowing the sauce to reduce and caramelize slightly on the bottom of the pan.
- Combine Vegetables and Beef: Return the cooked baby broccoli and onion to the skillet. Toss everything together to combine the flavors evenly and heat through.
- Serve: Microwave the frozen steamed jasmine rice according to package instructions or use freshly steamed rice. Serve the beef and veggie mixture over the rice, garnishing with sliced green onions.
Notes
- You can substitute baby broccoli with regular broccoli florets if unavailable.
- Adjust sriracha quantity to your preferred spice level.
- Using extra lean ground beef keeps the dish lower in fat and calories.
- If you prefer, fresh jasmine rice can be used instead of frozen packs.
- The sauce caramelizes better when left undisturbed; avoid stirring too frequently during this step.
