Shrimp and Coating
- 2 pounds medium to large shrimp (18-20 count), peeled and deveined
- 1 cup cornstarch

Orange Sauce
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1/2 cup honey or maple syrup
- 1 orange, zested
- 1/4 cup orange juice (no sugar added)
- 1 tablespoon mirin
- 1/4 teaspoon crushed red pepper flakes

Instructions
- Prepare the sauce: In a small bowl, whisk together minced garlic, soy sauce, honey or maple syrup, orange zest, orange juice, mirin, and crushed red pepper flakes until fully combined to create the orange sauce.
- Coat the shrimp: Pat the shrimp dry thoroughly using paper towels. Place them in a large bowl and add the cornstarch. Toss well to coat each shrimp evenly with a dry layer of the cornstarch.
- Heat the oil: Pour canola oil into a large frying pan to about 1 inch depth and heat over medium-high heat until hot but not smoking, ready for frying.
- Fry the shrimp: Working in batches to avoid overcrowding, fry the shrimp for 2-3 minutes on each side or until golden brown and crisp. Use a slotted spoon to transfer the cooked shrimp to a plate. Do not use paper towels for draining to maintain crispiness.
- Finish the sauce: After frying all shrimp, carefully pour out the oil from the pan. Stir the prepared sauce again to recombine any settled ingredients, then add it to the pan. Heat the sauce for 1-2 minutes over medium heat until it begins to thicken slightly.
- Combine shrimp and sauce: Add the fried shrimp back to the pan with the sauce. Gently toss the shrimp in the sauce to coat evenly, cooking for another 1-2 minutes until the sauce is glossy and clings to the shrimp.
- Serve: Immediately serve the crispy orange shrimp as an appetizer or with steamed rice. Garnish with sliced green onions and sesame seeds for extra flavor and presentation.
