This Baked Potato Wedge recipe delivers crispy, flavorful wedges with a fluffy interior. Coated in a savory blend of parmesan, garlic, onion powder, paprika, and black pepper, these wedges are oven-roasted to golden perfection and garnished with fresh parsley. Perfect as a delicious side or snack for four servings.

  • Total Time: 50-55 minutes
  • Yield: 4 servings

Ingredients

Potatoes

  • 4 russet potatoes, scrubbed clean (2 pounds / 900g)

Seasoning and Coating

  • ¼ cup freshly grated parmesan cheese, divided (12g)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 3 tablespoons olive oil, plus more for brushing
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and brush a large baking sheet lightly with olive oil to prevent sticking.
  2. Cut Potatoes into Wedges: Cut each russet potato in half lengthwise, then cut each half into quarters lengthwise to create 8 wedges per potato.
  3. Optional Soaking for Crispiness: Soak the potato wedges in cold water for about 30 minutes to remove excess starch, which helps achieve a crispy exterior and fluffy interior. After soaking, pat them very dry with paper towels or a clean kitchen towel.
  4. Prepare Seasoning Mix: In a small bowl, combine 2 tablespoons of parmesan cheese with salt, garlic powder, onion powder, paprika, and black pepper, mixing thoroughly.
  5. Coat Potatoes: Toss the dried potato wedges in a large bowl with the olive oil. Sprinkle the prepared seasoning mix over them and toss evenly to coat all wedges well.
  6. Arrange on Baking Sheet: Lay the potato wedges cut side down in a single layer on the greased baking sheet to ensure even roasting.
  7. Roast the Wedges: Bake for 20 to 25 minutes, then remove from oven and flip each wedge to the other cut side. Return to the oven and roast for another 10 to 15 minutes until they reach your desired level of crispiness.
  8. Serve: Transfer the wedges to a serving plate and sprinkle with the remaining parmesan cheese and chopped parsley for garnish. Serve warm.

Notes

  • Soaking the potato wedges is optional but recommended for crispier texture.
  • Use russet potatoes for the best roasting results due to their starchy texture.
  • Olive oil can be substituted with another cooking oil if preferred.
  • Adjust seasoning quantities based on taste preferences or dietary restrictions.
  • For extra crispiness, you can increase oven temperature slightly or broil briefly at the end, watching carefully to prevent burning.
